When it is pickled in rice wine vinegar, sugar etc. the ginger changes it color to a light pink in about a week.
I assume, the longer it is pickled, the deeper the color.
It can keep up to one month in the fridge.

Its for the eye-appeal. that's all. just like sushi. it's made the way it is because it's appealing to the eye. The japanese are masters at that.
