You won't get a very good answer here. This site has very few Vodun people on it and that's where the chicken-foot curse supposedly comes from. I don't know all about it, but I'll give it a shot anyway.
There is a religion in Haiti and parts of the Gulf Coast called Vodun. It is an offshoot of some religious practices from the Yoruba people of West Africa. Its main sacraments are drumming and dancing which bring on a trance state and unite the celebrants with a particular spirit. It scares white people. It was always intended to scare white people, so that they would stay away and leave the (at that time) slaves to worship in peace. It began to be called voodoo by people who were afraid of it (and hoodoo by some). Hollywood- always eager for new material for horror movies- picked up on the idea and added some very sinister elements to it, much the same as what Hollywood did with Egyptian mummy legends. And so, the chicken-foot curse was born. Later, some practicioners of vodun, still wishing to be scary, began to use animal sacrifices in their rituals. A chicken makes the best animal sacrifice because after the ceremony, you can make soup.
An animal sacrifice in the domain of so-called black magic works (if at all) only because the practicioner places his or her spiritual energy into the victim (the chicken in this case) or puts prayers or wishes into it before sacrificing it.
It is not easy to say where the actual practice overlaps any real effect or where fiction takes over. Magic in any form mostly just affects the person practicing it. But it is still very frightening and dramatic that someone should concentrate some feelings of hatred and violence into a chicken just before killing it, then cut its foot off and deliver that foot to the doorstep of an enemy.
I've said too much. If chicken feet really scare you, stay away from KFC.
To give a shorter version: any "curse" is more psychological than anything else and the effect is one of solidifying hatred between people.
Please remember to thoroughly clean all counters and utensils used for the preparation of raw chicken and love is way stronger than hate.

Its not really a curse, but its "prayers or worship" to a God in hope of something in return, usually by Voodoo, sainteria or lukumi (african slave created religions where muslim and tribal religions were mixed with christianity of europeans). It depends on what "prayers" they recite. However, traditionally with the chicken foot....the chicken's blood is offered to the Orisha, so the orisha will come to that person's aid. Animal sacrifice is called for in major situations such as sickness or serious misfortune.
In contemporary Jamaica, the chicken foot is still an important symbol in some religious rites. The killing of the white chicken and the pouring of its blood at the foundation of a newly constructed house, is regarded by some as important in warding off evil spirits.

You're speaking of Voodoo and it's not the chickens foot that causes a curse, its a instrument used in casting.
