Do not sub Molasses, it will make them bitter and too dark.

You must have vanilla. In fact the secret to good choc chip cookies is trippling the vanilla.

Condenced milk has no place in your cookies. I don't know who told you that.

*tip: you can make substitutes in cooking at will, but not in BAKING.

Baking depends on chemistry of certain chemical interactions to get the right volume, texture and color or the end product.

In stew if you add a vegitable or skip one you just change the volume at the end.

In cake if you change the sugar to honey, that changes the liquid ratio, and the sugar ratio. This can effect how it rises, how it browns (if it is too pale) if it is crumbly, if it has large air pockets, if it is chewy instead of tender...Al sorts of things.... It is bad mojo.

Unless you know what you are doing from years of experience or professional training, stick to a recipe someone else has already worked out. Otherwise you will just end up wasting the ingrediants you do have.

Sorry to bear the bad news!

i wouldnt suggest using artificial sugars and maple syrup. confectioners sugar or brown sugar will create a better cookie taste and not burn up such as syrup would. Vanilla gives a sweet taste without sugar... too much sugar will change the composition of your cookie to flatter, too gooey, and too sweet. Molasses is an old way for old fashion cookies and i wouldnt recommend it. Try using a dash of baking powder, subsitute margarine for oil, or add nuts. Margarine, eggs, and the dough is your most important ingredients. Space your cookies out on a flat sheet pan and your on your way. Good luck and happy eating.

yes you can replace the syrup with molassas...your cookies will have a different taste...ginger bread like....you can use maple or lemon extract for vanilla or just leave it out altogether.
