Banana Chips Recipe
Don't monkey around with these! Make a lot!
4 bananas (green tipped work best)
1/4 cup flour
2 cups vegetable oil
1 dash salt
4 cups
1. Peel bananas.
2. Thinly slice about 1/8 inch thick.
3. Dredge slices in flour to coat lightly.
4. In a wok or saucepan, heat oil to 375F on a deep frying thermometer.
5. Add banana slices in small batches without crowding.
6. Fry about 3 mins until golden brown.
7. Drain chips on paper towel and sprinkle with salt to taste.

Work with one banana at a time. Peel a banana and slice it very thinly.
Place the oil in a deep fryer or heavy-bottomed pan and bring to 325 F over medium heat. You need at least 1/2-inch depth of oil. Add the banana slices in batches (the amount will depend on the size of your pan). Fry until the chips turn crispy and become golden brown, 1 to 2 minutes. Remove the bananas with a slotted spatula and transfer to paper towels. Spread out the slices so that the chips can drain and dry in a single layer. Lightly sprinkle with salt and pepper, if desired.
Repeat with the remaining bananas

Basic banana chips:

Cut raw plantain into really thin rounds. Then, heat coconut oil (believe me, it tastes bests for banana chips) and put the chips and keep on stirring until a sound comes from the chips while stirring (means they are semi-stiff), At this point, spray some salted water into the oil and keep on stirring. . Do not worry about the sound, nothing will happen :-) Fry until the chips are real crisp.
If you want a good color to your chips, add a pinch of Mc Cormick turmeric powder into the heated oil.
If you do not have patience to cut the banana into thin slices, just quarter it and then cut into slices of around quarter inch thickness. Then do the same procedure as above.

Banana Fritters
INGREDIENTS:
2 ripe bananas
2 tablespoons milk
2 eggs
1 tablespoon margarine, melted
1 cup all-purpose flour
3 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1 pinch ground nutmeg
1 quart oil for frying
1 cup confectioners' sugar for dusting

DIRECTIONS:
In a large bowl, mash the bananas. Mix in milk, eggs and margarine until smooth. In a separate bowl, combine flour, sugar, baking powder, salt, cinnamon and nutmeg. Stir dry ingredients into banana mixture.
Heat oil in a deep fryer or heavy bottomed pan to 375 degrees F (190 degrees C). Drop batter by spoonfuls into hot oil, and cook, turning once, until browned, 2 to 8 minutes. Drain on paper towels and dust with confectioners' sugar.
