READ READ READ THIS. THE Crock Pot!!!!!!!!!! You can cook just about anything is the Crock Pot that you can in an oven. Even bake a cake. Anyway a good oven recipe can be done in the Crock casseroles, roasts, chicken & dressing, Bar-B-Q anything, MAC & CHEESE(baked kind), just don't add extra water no more than a tablespoon or two for a roast or baked chicken, it makes it own juice. If your oven is broke for a while you don't have to suffer to bad with a crock pot just start cooking earlier!
For now I'd just flour & pan fry them, serve with some mashed potatoes and a vegatable.
Or even put nothing but soy sauce on them(no salt!!!) , butter the bottom of a griddle or skillet , grill those onions you mentioned then put a little more butter get it hot but not burning butter lay that chicken in there for two or three minutes flip it and turn the heat down (still hot but not as hot) cook a few more minutes (breast cooks pretty fast) and you got grilled breast like the resturant, that and a baked potatoe and salad, quick and easy and not fattening, do this with catfish, or pork chops, yummy. Remember it takes less than 10 minutes to fix a meal this way!!!!!!!!!

You can make a stir fry with all those ingredients in a frying pan or wok, Slice the chicken up, cut up vegies, and add some nice flavorings, like oyster sauce, etc,cook the rice separatley and enjoy!

Chicken stir fry.
De bone the chicken, slice into thin pieces, make a marinade of 1/2 soy sauce, 1/2 teriyaki, one pinch of ginger. Stir, dump in chicken.
Start rice
Slice onions into similiar sized pieces as chicken.
put a thin covering of oil into frying pan. pre heat for a few minutes,
Dump in chicken and onions, stir rapidly for one minute or long enough for heat to get back up
Dump in mixed vege's. Cover. and cook for approximately 4 minutes or just until vege's are hot
remove and drain, saving sauce remaining in pan, serve over rice, drizzle sauce over the whole thing.

CHICKEN BREAST WITH COCONUT SAUCE
2 tablespoons peanut or olive oil
2 tablespoons garlic, minced
3/4 cup Vidalia onions, diced
8 chicken breasts, boned, skinned, pounded to 1/2" thickness
In a heavy bottomed skillet, sauté onions and garlic. Add chicken breasts and brown lightly. Do not allow garlic to brown (you might want to add it towards the end of the sauté).
Sauce:
3/4 cup white vinegar
2 1/2 cups water
1 chicken bouillon cube
2 cloves garlic
1/2 teaspoon black pepper
1/4 teaspoon paprika
1 teaspoon oregano
1 teaspoon ground bay leaf
1/2 cup soy sauce (low sodium)
1 1/2 tablespoons sugar
In a blender, combine sauce ingredients. Add to skillet. Cover and simmer, stirring occasionally, until chicken is tender.
To Serve:
1/2 cup canned coconut milk
1/4 cup fresh parsley, chopped
Pour coconut over chicken and allow to simmer an additional 20 minutes. Place on serving dish and ladle over with sauce. Garnish with chopped parsley.
Makes 8 Servings, 1 chicken breast per serving.
FRIED RICE
4 cups boiled rice
3 tablespoons olive or peanut oil
1 tablespoon dry green (or other) onion
1/4 teaspoon garlic powder (or 2 cloves fresh)
2 tablespoons dried mushrooms
2 dried whole eggs, rehydrated
1 tablespoon soy sauce
shredded canned ham, pork or chopped shrimp (optional)
Sauté rice in oil for 5 minutes, stirring occasionally. Add green onions and mushrooms and meat, if using. Cook for several minutes. Combine rehydrated eggs with soy sauce and stir into pan. Cook until eggs set.

Take a frying pan, place a pat of butter under each breat, take a can of cream of chicken soup and half a can of water, cook all contents for 45 minutes on low to medium heat, serve with rice, place breast on rice, cover with cream soup.
OR slow cook chicken in fry pan with butter, garlic powder, onion salt a pepper until done.

Do you have a grill? Why not have a barbecue?\
Does your stove still work? You could cut up the chicken, brown it in a frying pan, and add the veggies and rice for a nice stir-fry.

Sounds like stir-fry night to me! Slice them thin, cook them at high heat with the veggies and onions (toss an egg in if you have one) and season with Chinese 5-spice (you can substitute with cinnamon, allspice, and nutmeg if you don't have the 5-spice) and soy sauce. Toss them over the rice, and you're in for a delicious meal!

You could consider chopping the chicken up into small bits then making a stir fry, curry or something similar by frying the chicken.
