I make a really nice lasagna. People always tell me it is as good as the restaurant.
I used to say I was a better baker than cook, but since we moved to the Midwest I had to become a good cook to eat well. They aren't realy known for the ethnic food here. So I am a great cook now too.
I think it helps to understand HOW the stuff happens, like why food browns and stuff.

Four cheese, four mushroom, Escargot Pizza. Cook the escargot till almost crunchy in garlic and butter. Cook the mushrooms in the snail butter. Grease the pizza pan with the snail butter. Spread the dough, top with pizza sauce, add grated cheeses (your choice) top with mushrooms, escargot and bake until perfect. Open some red wine and enjoy.

Pasties and pork pie. Having been raised in a very eclectic neighborhood, the English, French, and Italian influence was tremendous and made for very interesting cooking.

Well, I have improved greatly over the years - I can still remember catching my first apartment on fire trying to pop popcorn on the stove! That made a great impression on my blind date that arrived just as the 4th fire truck did.....Now I make several things very well, but my specialty has to be my homemade spagetti sauce ( made entirely from scratch with tomatos fresh from my garden!!)

I love to cook, but my favorite dish is beef roulades with spaetzle and asparagus.
1 1/2 lb Flank steak
4 teaspoons Dijon mustard
6 slices Bacon, diced
3/4 cup Chopped onion
1/3 cup Chopped dill pickle (Gherkins are fine)
1/4 cup Flour
13 3/4 oz Can beef broth
With meat mallet or rolling pin, flatten meat to approximately a 10x8 inch rectangle.
Spread mustard over meat. In large skillet, over medium high heat, cook bacon and onion until bacon is crisp; pour off fat, reserving 1/4 cup. Spread bacon mixture over meat; sprinkle with pickle.
Roll up meat from short end; secure with string. In large skillet over medium high heat, brown beef roll in reserved fat; place in a 13x9 inch (330 mm x 230 mm) baking dish.
Stir flour into fat in skillet until smooth; gradually stir in beef broth. Cook and stir over medium heat until thickened. Pour sauce over beef roll. Cover; bake at 325F for 1 1/2 hours or until done.
Let stand 10 minutes before slicing. Skim fat from sauce; strain and serve with beef roulade.

Both my husband and I are pretty good cooks. I think some of our bests are green chile chicken enchiladas, taco casserole, veal parmesan and lasagna.
