ok songs:
down the aisle: canon in D major is beautiful although i also think walking down the aisle to "come what may" (from moulin rouge) would be pretty.
first dance song: i still like "come what may"....and you could use it for both if you wanted or you could use garth brooks "to make you feel my love" i like that one too.
song for mom: "because you loved" me by celine dion or the boys II men song "mama"
for flowers....since its january, calla lillies would be pretty, so would snowball mums, hydrangeas, and gardenias

Pachelbel's Canon in D is a very nice song to walk down the aisle. For the first dance song, is there something special for you and your fiance? What songs does he like for this?
Below is a link of flowers that are in season in January. I had astrolomeria in my bouquet, and it was lovely. The very good thing about roses, though, is that they are very hardy flowers. That's why they're so common for weddings; they won't wilt during the ceremony.
There are lots of songs that would be nice for your mom. Wind Beneath my Wings by Bette Midler or Because You Loved Me by Celine Dion would be appropriate. My fiance dedicated an N'Sync (or maybe it was Backstreet Boys?) song to his mother titled "Biggest Fan."
Good luck, and why not try to involve your fiance in some of these decisions.

Song for your Mom: You raised me Up - Josh Grobin
Are you in a state with Snow in January. Maybe something with Christmas Pine/I know it is more of a december. But if you are in a warm state. Maybe Lilies.
I walked down to Canon D Minor. Good slow and different, I had some play it on the piano.
not sure on first dance because that should be something special for you and your husband to be.

I recommend using music that you and your fiance like! Here is a list of music we are using at our wedding in 2 weeks:
1. for the Processional - Here Comes the Sun, by the beatles
2. I am walking down to Up and Away by Dave Matthews
3. Before the ceremony while the guests are being seated (all songs will be played by one guitarist and no singing...just the guitar) we are having all songs that we like, like Bittersweet by Big Head Todd, Moondance by Van Morrison, Crash by DMB and so on...all songs we like and that other people know. We didn't want the typical wedding music!
Also, for the mother son dance we are doing Sail Away by David Gray, Father daughter dance is In My Life by the Beatles
