My mom made this a lot when I was growing up. The taters were boiled (though cooked in the crock pot would work just fine) then mashed with a fork and buttered then the kraut juice poured over them--not low-fat, for sure! And she always had sweet fried apples and green beans with a little bacon and pearl onions on the side. Brings back memories.....

Is the pork just pork sausage? If so u should make hot links or bratwrusts (sp?) Just get a few buns and put a little pork it in and maybe some kraut on top. Makes a great party meal. Then serve the potatoes on the side. Or maybe just substitute w/ potato chips, which go better w/ the buns. Maybe add a salad on the side too or some type of veggie.

I don't think that you should add anything to that except a dinner salad and maybe some bread. If you want to add a vegetable, then corn, but that will be another starch/carb.
The more that I look at it, I would just go with a salad and bread. That seems like enough.
