We're not all the descendents of Noah. When God flooded the "erets" , a Hebrew word for land, he didn't flood the entire earth, just a portion of it. There were other people and ethnicities living on the earth at that time.

“The origin of races: answered”
Genesis11:1 And the whole earth was of one language, and of one speech.
11:2 And it came to pass, as they journeyed from the east, that they found a plain in the land of Shinar; and they dwelt there.
11:3 And they said one to another, Go to, let us make brick, and burn them thoroughly. And they had brick for stone, and slime had they for mortar.
11:4 And they said, Go to, let us build us a city and a tower, whose top [may reach] unto heaven; and let us make us a name, lest we be scattered abroad upon the face of the whole earth.
11:5 And the LORD came down to see the city and the tower, which the children of men builded.
11:6 And the LORD said, Behold, the people [is] one, and they have all one language; and this they begin to do: and now nothing will be restrained from them, which they have imagined to do.
11:7 Go to, let us go down, and there confound their language, that they may not understand one another's speech.
11:8 So the LORD scattered them abroad from thence upon the face of all the earth: and they left off to build the city.
11:9 Therefore is the name of it called Babel; because the LORD did there confound the language of all the earth: and from thence did the LORD scatter them abroad upon the face of all the earth.
11:10 These [are] the generations of Shem: Shem [was] an hundred years old, and begat Arphaxad two years after the flood:
shem was the son of Noah.

God created all the races on the 6th day of creation. Genesis 1.
God told Noah to take 2 of every flesh, not just animals. All the races were on board the ark.
Gen 6:19 "And of every living thing of all flesh, two of every [sort] shalt thou bring into the ark, to keep [them] alive with thee; they shall be male and female."
You should ask "Why did God bring the flood in Noah's time?"
Maybe someone will answer correctly.

inbreeding?
if i thought it was possible to repopulate the world to this extent so quickly, i would say that races are a genetic misprint carried on through the centuries through some serious inbreeding.
seing as how i don't believe any of it, i'll say that some people developed black (or white, or red, or yellow) skin for the same reason sharks developed a skeleton made entirely of cartilage, or syberian huskies a thick undercoat of fur - because it suited their environment best and gave them a survival advantage.

Because of personal preferences.
Me, I prefer good old stock car races. NASCAR, ARCA any stock car.
I don't care much for open wheel races except the sprints. That Indy series and grand prix stuff is for the french snobs.
