Dan’s Texas Tortilla Soup Recipe
6 tablespoons of vegt oil
8 (6inch tortillas) or bag of tortilla chips
6 cloves of garlic minced
½ cup chopped cilantro
1 onion chopped
1(28-29oz.) can diced tomatoes
2 tablespoon ground cumin
1 tablespoon chili powder
3 bay leaves
6 cups chicken broth
1 tablespoon of salt
½ teaspoon of ground cayenne pepper in case no cayenne ( use two seedless and slice) jalepeno’s
5-6 boneless chicken breasts(cut into strips)
1 cup of corn
Directions:
1) Heat oil garlic, cilantro and onion sauté 2 to 3 minutes
2) stir in tomatoes and bring to a boil , add cumin chili powder bay leaves and chicken stock ;return to a boil reduce heat to medium add salt and cayenne or jalepenos and corn. Simmer for 30 minutes remove bay leaves and stir in chicken , heat for 5 minutes .
3) Add corn or mushrooms or an additional ingredient of similar heartiness of your choice if you wish.
Serve garnish with crispy tortilla strips cubed avocado , shredded cheese or sour cream

Easy Lasagna
1lb hamburger
1 cup ricotta cheese
1 cup cottage cheese
1 package shredded cheese (the kind that has multiple cheeses)
Reserve about 1/2 cup
1 egg
1 Jar of favorite sauce
Lasagna noodles (about 8)
Brown hamburger ( I spice it up and sometimes add chopped onions) Mix the cheeses and egg together. Cook the noodles a little al dente. In a baking dish. Spray with Pam spray, add a little sauce to the bottom the layer with noodles, 1/2 cheese mixture the 1/2 Sauce then more noodles then other half the cheese mixture top with sauce. Sprinkle with reserved half cup of cheese. Bake 350 for about 45 minutes.
Sprinkle with Parmesan cheese and some pepper flakes for a little kick! Serve with a nice side salad and garlic toast.

Broccoli & Rice Casserole
1 bag frozen broccoli
1 bag Mahatma Saffron Yellow Rice
1 can Cream of mushroom soup
1 pkg Sharp Finely Shredded Cheese
Cook both broccoli and rice according to package directions. Combine cooked broccoli and rice with can of cream of mushroom soup. Transfer to baking dish and top generously with shredded cheese. Bake at 350 for 20-30 minutes or until cheese is golden brown

I just now figured it out - I'm going to pick pasta primavera with linguine noodles, a light olive oil dressing, artichokes, broccoli and carrots - a delicious glass of white wine, and some buttery poppyseed bread with ice cream for dessert. Yummm

I dont have dinner...I usually have it on lunch time...so use to it now!! But I had a carrot toss with onions, rice, hot sauce...I know sounds nasty but i dont know i love it!!!
I also love vegetable soup!!
