I recently picked up a set of Adams GT-3 irons with graphite shafts. They say regular flex. I am a young guy (24) and hit the ball pretty hard and far. Average driver distance is 230-260 yards. I am right handed. What would happen if the graphite shafts in my new irons are too flexible?

Two things, the ball always goes to the right: resulting from you bending the shaft too much the club face can't come back at squre position at impact, as your hand will be too fast for the flex if you swing through. Sometime, it surprises me should this happens, and I hesitate a little, causing my swing to jerk and the club face close much too early, and the ball goes duck hook to the left.
Try video your swing, if when you initiate your down swing and you see your shaft arh like a bow, it's too soft.

If they are too flexible and the club head speed is fast, the ball will travel two thirds of the way fairly straight, then turn right. How bad depends on how bad the flex. If you have very good club head speed, it might be wise to try a couple of stiff shafts on the range....

If your club head speed is over 100 mph you should have stiff shafts. You could end up breaking the shafts in your irons. Best bet is to go to your local golf store and have your clubs fitted for yourself. Also if it is available to you check out your swing on a launch monitor and it will give you all the info you need to find out what shaft, loft angle etc would work best for you.

The easiest way to learn golf like a pro is by following "The Simple Golf Swing" program. It's primarily a 31 page eBook that teaches golfers how to make solid contact with the ball, how to avoid hitting fat, how to avoid slicing, how get more power, accuracy, and consistency in your swing. Consistency being the number 1 golf skill.

You not only get the eBook though, you also receive a ton of extra material including video, lessons on putting, driving, chipping, sand play etc. Here is their official site: http://www.golfswingguru.net
