I'm vegetarian so I like avocado and cheese:

Wheat bread, pesto, sprouts, tomato, and avocado, with one slice of pepperjack and one of smoked cheddar cheese.

A good bun is essential. I use a flat french loaf, (what we call a "baguette" here in Mexico.) But even better would be a sourdough sub or any "sub" bun.

- first Dijon mustard
- then a layer of turkey breast
- then a layer of thin sliced roast beef
- salt and pepper
- then a layer of bacon strips,
- next a layer of cheese, (Edam, Gouda, Swiss or Mexican manchego go best with the turkey I think.)
- next a nice layer of thin sliced tomatoes, (or pickle slices, or both)
- then a cover of lettuce
- (optional for the adverturous and the Mexicans, pickled green chili slices)
- top with a favorite dressing or green chili sauce and voilá.

Another favorite, the simple corned beef on rye:

- 2 huge thick slices of very fresh (still warm) rye bread,
- spread on lots of very hot English-style mustard,
- paper thin corned beef, piled as high as your mouth can open
- top with a layer of fresh Swiss cheese slices, lightly melted......

The preparation for this pork sandwich is a little long but so worth the effort. First marinade some pork tenderloin in a combination of sesame oil, rice cooking wine, creole seasoning, and carraway seed before grilling. Slice grilled pork and begin with a nice thick whole wheat(or bake your own). mix horseradish, grated parmsean, and mayo and spread over pork. Add spinach and tomato. Enjoy!

This is my favorite that I created: I take pita bread and add light mayo, chicken, tomatoes, basil, onions, cheese, and lettuce. It is delicious! If I have time, I put it under the broiler for 3 minutes and it is even better!

I like pitas sliced in half spread with either mayo or humus. Cold left over chicken shredded, red onion, green pepper sliced very thin and plums sliced very thin. Yes...plum slices...as in the fruit. It is a delicious combo. I love them.
