I use to can tomatos just the tomato and salt and than i would just hot pack them and let them sit on the counter. Does anyone else do that or do you all boil the jars?

boil the jar creates a tight seal .. if you just rack them they will not last as long and white foam is created around the lid so my answer will be boiling them

I put up tomatoes every summer. The only way I will put them up is using the "hot bath" method, otherwise they won't have as long a shelf life. However, I do not add salt. As a matter of fact, the only other thing I will add to my tomatoes would be basil and garlic. Those jars are used mainly for Italian dishes. I only can enough tomatoes to last a year. I don't think beyond that would be good. Enjoy your tomatoes :)

I boil the lids. And put a teaspoon of salt in a quart size jar. Add the tomatos. And let it set.

i wash the jars then fill with tomatoes/juice...put lid on and put in bath canner...also add 1 teaspoon salt per qt jar....process the quarts for 30 minutes..been doing it this way for several years and we are still alive...also have not had to dump out any yet that was bad

I used to help my parents, and we always boiled the jars. It seems more sanitary that way.

easier, freeze them whole, this works so well. Run under warm water & the skin comes right off.
