Chunky Navy Bean Soup Recipe ***
A nice thick version on regular navy bean soup. I usually serve with hot cornbread and butter, maybe a few green onions on the side. You could use bacon instead of the ham hock.
1 1/2 cups dried navy beans
1 large ham hock
3 cloves garlic, minced
4 cups water
2 large onions, chopped
3 large potatoes, peeled and cubed
5 cups water
2 teaspoons salt
1/2 teaspoon pepper
Sort, wash, and soak beans overnight.
Drain beans.
Add ham hock, garlic and 4 cups water.
Bring to a boil, cover, reduce heat, and simmer for 3 hours.
Add remaining ingredients.
Cover and simmer for 30-40 minutes, stirring occasionally.

Okay make sure you go through them looking for any bad looking beans, tiny rocks, and dirt, then wash them. You can soak them over night but no need really. Then place in large pot with lots of water, add garlic salt, a little pepper, and ham hocks. Let this cook on low setting on stove for 5-6 hours. When they are done the beans will start to split open a little, just taste them and you'll be able to tell when they are done. Also the water needs to be watched as you cook them, if need be add water, the beans will start soaking the water in and you don't want them to cook dry, they'll burn. Good luck. These are really good on or with corn bread.

Navy Bean Soup Recipe. There is nothing like a hot bowl of Navy Bean soup on a cold winter's day. The good news is it's very easy to make and doesn't take all day.
--------------------------------------------------------------------------------
Ingredients
navy bean 1 lb thoroughly rinsed
ham hock 1
water 8 cups
butter 1 Tbsp
yellow onion 1 small & diced
salt 1 Tbsp to taste
black pepper 1/2 tsp to taste
--------------------------------------------------------------------------------
Directions
In a stock pot combine the navy beans, ham hock, and water. Cover and bring to a boil.
Uncover and reduce the heat. Simmer for 1 hour or until the navy beans are tender.
In a sauté pan melt the butter over medium heat and add the diced yellow onion.
Sauté until the onions are translucent. Remove and set aside.
When the navy beans are tender remove the ham hock and set aside.
Stir in the diced yellow onion.
Slice off the meat from the ham hock bone and dice. Add to the soup and simmer for an additional 10 minutes.

At my house we rinse the beans and let em sit 8 hours in water. Then we add a couple of ham hocks, salt and pepper, slice up a stalk of celery, a carrot, and an onion and drop those in, and cook the beans til they're soft. Then we take the ham hocks out and get all the meat off, returning it to the pot. We eat em with saltines and ketchup in em.
