Tex-Mex Salad with Chili Vinaigrette

Makes 8 to 10 servings

Ingredients:
Salad:
1 cup long grain rice
1 15 ounce can pinto beans, rinsed and drained
1 1/2 cups fresh or frozen whole kernel corn
3 green onions, sliced
1/4 cup red sweet pepper, chopped
Vinaigrette:
1/4 cup corn oil
2 tablespoons lime juice
1 tablespoon cider vinegar
1 tablespoon brown sugar
2 pickled jalapeño peppers, stemmed, halved and seeded
1 teaspoon chili powder (or more to taste)
1/4 teaspoon salt
1/2 teaspoon ground cumin
Preparation:
Salad:
Cook rice in salted water as directed on the package. (The rice can be cooked ahead and chilled.)

Combine cooked rice, beans, corn, green onion, and sweet pepper in a large bowl. Toss lightly to mix.
Vinaigrette:
Combine corn oil, lime juice, vinegar, brown sugar, jalapeño pepper, chili powder, cumin and salt in a blender container or food processor bowl. Cover and blend or process until smooth.

Pour dressing over rice mixture; toss to coat. Cover and chill until serving time or up to 2 days. Serve at room temperature.

"I Can't Believe They're Vegan" Pancakes

1 cup unbleached all-purpose flour

1 1/2 tablespoons sugar

2 tablespoons baking powder

1/8 teaspoon salt

1 cup milk alternative (soy, rice, oat and almond milks work)

2 tablespoons vegetable oil
Combine dry ingredients and mix thoroughly. Mix in the liquids and beat with a whisk or electric mixer until the batter is smooth. Measure 1/3 cup batter onto a previously-heated, well-oiled griddle or pan. When bubbles appear on the surface of the pancake, in about 2 minutes, flip it with a spatula. Cook it for another 2 to 3 minutes. Remove from griddle. Serve with maple syrup, jam or fruit syrup.

Faux" Mozzerella, Tomato, and Basil Sandwich

1/2 cake of firm or extra-firm tofu

2 large tomatoes

handful of fresh basil leaves

salt

garlic powder

olive oil

1/2 loaf Italian/French bread

Cut bread into thick slices. Slice tofu and tomatoes into pieces of equal thickness (approximatly 1/4 to 1/2 inch). Mince basil leaves. Place a slice of tofu on a slice of bread, and drizzle with a small amount of olive oil. Add salt and garlic powder (adjust amount to your preference), as well as a generous amount of basil. Place another slice of bread on top, and serve.

By some big cupped mushrooms, Some medium strength Cheddar, And some Garlic.( Chillies optional)

Get two of your mushy's take the stalks off, fill one side with cheddar and strips of garlic (Chillies in you wish) and a bit of Basil (if you have it), Sprinkle with a bit of E.V olive oil. Put the other mushroom on top and then push a couple of cocktails sticks through to hold it all together. (chop bits of stick off that are potruding out of the mushy's.)

Place on a griddle pan or under the grill and wait for the cheese to start dripping out of the sides, Take off the grill and serve with Tomato, Mozzerella & Basil salad. (Sprinkle with olive oil)

Please try it, It is proper heaven.

hard to say, when we don't know what you eat regularly.
My gf is a vegetarian. When we started dating, we began experimenting with ethnic vegetarian foods. we did a little Indian, a little Cuban, some Mexican (chilaquiles) and some Nicaraguan since I'm from there. It's a lot of fun to do that, and the fact that I'm not vegetarian (I'm omnivorous!) was never a problem.
She recommended that I browse the vegetarian times web site at www.vegetariantimes.com
I don't know if you have, but I got lots of ideas from that site.

What do you normally eat it helps knowing what u r bored of.
A nice farmhouse veg mix with cream sauce pie put ur fav vegs in a dish cover in a white sauce and top it with some puff pastry.
Carrots,broccolli ,leeks and peas,chopped parboiled potatoes i'd do that at home but i put chicken in mine.
