Its the large part of the rack. babybacks are more tender

It's basically the cut of the rib. Anatomically, the babyback portion is the portion closest to the spine, the spare ribs are the portions on the side and the St. Louis cut are the prtions on the underbelly of the animal.

They are usually full of bones and gristle (sp?) but have good meat on them. they are usually chopped up and called "rib tips" where I'm from (Chicago). We don't give St. Louis credit for anything. Go Cubs!!

I generally like the spare rib cut myself... it has more meat and is considerably less expensive than the babyback protion.

There are two different types of pork ribs. Baby Back are the smaller, tapered rack of ribs. St. Louis ribs are much broader and meatier than Baby Back. They are simply cut from a different part of the hog's ribcage.
