I don't like the taste of homemade ice cream made with Eagle Brand or other sweetend condensed milk. I would appreciate a good recipe, particuarly a vanilla with real vanilla beans.

2 qts heavy cream
9 oz granulated sugar (about 1 cup + 1 Tbsp)
18 egg yolks
1 vanilla bean

scrape seeds from inside bean (put in large bowl)and add scraped pod to cream in a large sauce pan. Scald.

add sugar and vanilla seeds to yolks and whisk till pale yellow and seeds are evenly distributed.

while whisking vigorously, slowly ladle about 1/2 the hot cream into the yolk mixture. After incorporated, pour that back into the cream( keep whisking!)

That is creme anglaise. from here, you can bake it in a water bath and make creme brulee or put it in your ice cream machine and make ice cream. You can also cook it a little longer in a double boiler and have a dessert sauce.

Ok it is called gelato you make it with milk and fresh fruit and it is way better than ice cream. Oh made same way as ice cream you just delete the cream and use food proceeor to turn fruit to a liquid.
