News reports say these large, heavy, water critters knocked a man unconscious, when jumping up and knocking him off his jet-ski.
Wondering if they are common food?

As someone mentioned, these magnificent creatures are killed to make caviar, which is why I refuse to eat caviar. I saw a live sturgeon once in an aquarium in Taiwan, and it looked like a ghostly underwater dragon, prehistoric-looking in appearance. It was about 6 feet long and moved with slow, dream-like movements. It looked me in the eye as it swam by, and there was something sad in it's expression, although perhaps this was just an illusion. These fish have been around since the dinosaurs, and have remained virtually unchanged since then. They are very long-lived (50-60 years), but slow breeders - because of this they are threatened with extinction due to over-zealous fishing. Just add them to the list of casualties created by human thoughtlessness and greed. Do they taste good? Probably not, because once the eggs are removed, the rest of the fish is discarded - just like when elephants are killed by poachers for their tusks and left to rot, or when sharks are killed for their fins to make shark fin soup. I'm glad that sturgeon knocked someone off their jet-ski. I mean, it was the sturgeons territory, and the sturgeon had a right to defend itself.

Yes, sturgeon seems to be hot this year. Hooray! Sturgeon are wonderful game fish; so much fun to catch! Their meat is also exquisite! Now, just because the fishing is great, don't go overboard!

1 lb. sturgeon steaks or filets
1/3 C mayonnaise
1/2 C cracker meal crumbs
1 tsp. lemon pepper
1 tsp. butter
Preheat oven to 425 degrees. Grease a metal baking pan with the butter. Spread a generous amount of mayonnaise on both sides of the fish.
Roll fish in cracker meal flavored with the lemon pepper. Place fish in the baking pan. Lay a piece of foil loosely over the top of pan and place in the oven. Cook for 5-7 minutes, until cooked. Serves 4.

Actually sturgeon are used for their roe, eggs, to make caviar.
