HERE ARE SOME ORIGANAL RECIPES
MEXICAN DIP
1 (7.5 oz.) can tomato and jalapeno sauce
1 lb. Monterey Jack cheese, shredded
4 tbsp. chunky taco sauce (salsa)
Nacho cheese flavor tortilla chips
Shred cheese. Add all other ingredients together. Place in microwave dish, heat for 5 minutes. Stop and stir, continue heating for another 5 minutes or until all cheese has melted. Serve with chips.
WALT DISNEYS NACHO CHEESE SAUCE
Ingredients:
1/2 pound Provolone, grated
1/2 pound American cheese, grated
3/4 cup Heavy cream
8 ounces Cream cheese
1/4 teaspoon Garlic powder
3/4 teaspoon Worcestershire
1/8 teaspoon Cayenne
1/8 teaspoon Yellow food coloring
Directions:
Melt provolone in top of double boiler over boiling water. Add American cheese and stir in cream. Add cream cheese and stir until all is melted. Remove from heat; whip in seasonings and food coloring. Serve warm iwth crackers, chips, or vegs.

VELVETTA IS NOT CHEESE!!!!!! but it does work for nachos...ou just have to add some real cheese for that authentic flavor. I am a cheese conasure' and this is the only recipie I use for nachos..throw in some fresh cilantro if you can get it. Enjoy your nachos. Good times.
1 pound pasteurized cheese (recommended: Velveeta)
8 ounces shredded Cheddar
8 ounces shredded Monterey jack cheese
1 (14-ounce) can tomatoes with green chilies (recommended: Ro-tel)
1 tomato, diced
1/2 jalapeno pepper, finely diced
1/2 red onion, finely diced
2 green onions, chopped
1/2 teaspoon freshly ground black pepper
1 tablespoon ancho or chipotle (or other) ground chile pepper
Kosher salt
Combine all ingredients in a double boiler and stir until melted. Season with salt, to taste.

You could use the cheese soup and drain the liquid out of your salsa and pour that over your chips.
Velvetta is really the best, make it in a slow cooker where it can melt slowly and be sure to drain the liquid out of your salsa. This why you can spice it up as much as you want and you could also add some hamburgar or some other kind of meat.

If your grocery has a wide array of cheeses....try Chiuaua(sp?) Cheese (sounds like the dog)...its a white cheese that melts very easy and it also come with peppers in it so you can have as mild or hot as you like.......this is the cheese most Mexican places serve now.

1 box Kraft American cheese (its in the same section as the Velvetta, but its REAL cheese and its WAY better than Velvetta)
1 can Rotel (extra hot)
1 handful chopped cilantro
Cut cheese into cubes, place in bowl and add Rotel, microwave until melted, stir in cilantro.....
Easy as that! And delicious!

Cheddar cheese cubes melt in double boiler, add cayene peppers, cilantro and box chili mix. It great.

For me, one of the tastiest things is to get a jar of tostitos queso sauce and mix it in equal parts with canned chili. Mix it up and microwave for pure lovin!
