Creamy Pesto Chicken

INGREDIENTS:
1 tablespoon extra virgin olive oil
4 skinless, boneless chicken breast halves - cut into strips
4 large cloves garlic, sliced
3 1/2 tablespoons sherry
1/4 cup pine nuts
1/2 cup chopped fresh basil
1 (8 ounce) container reduced fat sour cream
3 tablespoons grated Parmesan cheese
ground black pepper to taste

DIRECTIONS:
Heat the olive oil in a skillet over medium heat, and cook the chicken for about 5 minutes, until lightly browned. Mix the garlic and sherry into the skillet. Cook and stir until all the liquid has been reduced and the chicken is no longer pink and juices run clear.
Mix the pine nuts into the skillet, and cook 2 to 3 minutes over medium heat. Reduce the heat to low, and mix in the basil, sour cream, Parmesan cheese, and pepper. Continue cooking until heated through.

HERE ARE SOM CARIBBEAN MEALS THEY ARE QUITE SCRUMPTIOUS



Cranberry Meatloaf*




2 lbs. ground beef or turkey
1 egg

1/2 cup Trés Tropical Cranberry-Orange Salsa
1/2 cup water or beer

salt and pepper to taste





Mix ingredients. Cook at 325 degrees until done, about 1 hour. Cover with more salsa when nearly done.



*This recipe is best when used at 7000 feet above sea level. Please adjust recipe accordingly.

Phoulorie
2 cups split peas powder
1 clove garlic, crushed

1/2 cup flour
black pepper, freshly ground

1 tsp saffron powder or 2 tsp curry powder
1-1/2 tsp salt

2 tsp baking powder
oil for deep frying







Mix split peas powder with all ingredients except water. Add enough water to make a thick batter. Heat oil in heavy pot.

Drop batter, a teaspoon at a time into the hot oil, and let cook until brown. Drain and test one for salt and dryness. If too dry add a little water to the batter.

Serve with our Mesquite Smoked Jalapeño Salsa, spicy chutney or a peppery tamarind sauce.

Serves 4 to 6 persons.

Shrimp Louie

with Kiwi Jalapeño Hot Pepper Sauce




1/2 Sweet Onion, Peeled and Grated
1 cup of chilled mayonnaise

Dash of Red Savina Hot Pepper Sauce
(Caution Very Hot!) Add Only A Small
Amount For Color and Heat
Kiwi-Jalapeño Hot Pepper Sauce (Add To Taste)

1 1/2 lbs. of Jumbo Shrimp, Fresh or Frozen
Pinch of Lite Salt

Dash of Worcestershire sauce





Sauce:

Mix the first five ingredients, and chill for 2 to 3 minutes.

Chilling is best done while boiling shrimp

Thaw the frozen shrimp. Bring to boil water in a two-quart sauce pan and add the shrimp to the boiling water, and cook until red, approximately 1 to 2 minutes.

Do NOT over cook the shrimp!

Strain the shrimp immediately and wash with cold water. Peel the shrimp leaving the tails on. Dip in sauce and enjoy!

Roast Pork Calypso

5 lbs. pork loin
2 cloves garlic, crushed

1 tsp. hot pepper sauce
2 large bay leaves, crushed

1/4 tsp. black pepper, ground
1 cup dark rum

1/4 cup fresh lime juice
1 tsp. salt

2 1/2 cups chicken stock
1 tsp. ground cloves

1/2 cup brown sugar
1/4 tsp. ground nutmeg

2 tsps. arrowroot


Score the surface of the pork roast using a diamond pattern. In a separate bowl, combine black pepper, salt, ginger, cloves, nutmeg, garlic, and hot sauce. Mix well. Rub mixture into the scored surface of pork loin. Crumble bay leaves on top and place in a roasting pan along with 1/2 of the chicken stock, and half cup of rum. Roast at 325 F degrees for 2 1/2 hours (30 minutes per pound).

Periodically baste with a sauce made by combining brown sugar, lime juice, and 1/2 cup of rum. Add stock to basting mixture as necessary. Remove bay leaves after cooking, place on platter for 15-20 minutes.

Combine basting sauce, remaining stock, and drippings in a saucepan. Bring mixture to a boil, add arrowroot and a little water, stirring frequently until gravy has thickened. Serve with roast on a bed of rice.
