An embalmer only substitutes the dead persons blood with a chemical to stop the body decomposing.
The coroner only takes samples of body parts.. he/she then places the organs back in the body cavity.

They stay in the body. After all, they're not trying to "mummy" the corpse. I believe the embalming fluid is what keeps the organs from smelling/rotting. Kind of like formaldehyde.

Some people donate their organs for others to use, or for science. I'm an organ donor. So if I get killed they'll wisk me away as soon as possible so they can get those organs. I have a little red heart on my drivers lisence that tells the paramedic this.
