As a general rule, Dry Ice will sublimate at a rate of five to ten pounds every 24 hours in a typical ice chest. This sublimation continues from the time of purchase, therefore, pick up Dry Ice as close to the time needed as possible. Bring an ice chest or some other insulated container to hold the Dry Ice and slow the sublimation rate. Dry Ice sublimates faster than regular ice melts but will extend the life of regular ice. Dry Ice will save all your frozen goods.

To keep the ice cream soft you should put the dry ice on top of the ice chest as opposed to the bottom whiich will only keep it cold.

Seeing as ice-cream is normally 50% air bubbles, I would say that your 'soft' ice cream has a slightly higer percentage, maybe 65%?
Since air is a good insulator of heat, this ought to make 'soft' ice cream melt comparatively slower than 'normal' ice cream.
