I bought chicken sausage from my local deli recently and I am unsure how to cook it. I tried to cook it on the grill, but I over cooked it because I was worried about not cooking it all the way through. Does anyone have any ideas on how to cook it properly and any recipe ideas that use chicken sausage? The meat is in large sized links, not patties. Thanks.

Place it in an aluminum pie pan; add onions & peppers, 1/2 can of beer or so (to cover) - cook on the grill for 30 minutes

Do not use sharp instruments when cooking any type of "cased" foods. Do not pierce as all the juices will run out.

Check the label. A lot of chicken sausages are sold already cooked and only need to be lightly grilled or pan fried to heat thoroughly. Bangers, for example, or chicken/apple sausages.

Mary...a sure way to cook some sausages (any kind) are to put them in your crockpot, on low heat for about 8 hours. With the sausages, put in some peppers, onions, abit of chicken broth and let it go..the sausages come out so tender!!!
