Pumpkin Bread. Makes 2 loaves.
INGREDIENTS:
3 1/2 cups all-purpose flour
2 tsp. baking soda
1 1/2 tsp. salt
2 tsp. cinnamon
2 tsp. nutmeg
3 cups sugar
4 eggs, beaten
2 cups of fresh pumpkin --> 16 ounces if using canned pumpkin
2/3 cup water --> if pumpkin is canned
1/2 cup water --> if pumpkin is fresh or frozen
1 cup vegetable oil •1 cup chopped pecans
DIRECTIONS:
Preheat oven to 350 F. Combine flour, soda, salt, cinnamon, nutmeg and sugar in large mixing bowl. Add eggs, water, oil and pumpkin. Stir until blended. Add nuts. Mix well. Pour into two 9x5" loaf pans. Bake 1 hour. Cool slightly and take out of pans to let cool on a rack. This tastes best if you wrap, refrigerate and wait a day to eat it. It keeps well in the refrigerator and can be frozen.

Traditional Pumpkin Pie Recipe
Ingredients:
1 1/2 cups Cooked, strained pumpkin(or canned)
2/3 cup Sugar
1/4 cup Brown Sugar
1 1/2 cups Evaporated Skim Milk
3 Eggs
3/4 teaspoon Cinnamon
1/8 teaspoon Ground cloves
1/4 teaspoon Ginger
1 teaspoon Grated Orange Peel
1/4 teaspoon Nutmeg
1/4 teaspoon Salt
1 Unbaked Pie Shell
Preparation Directions:
Preheat oven to 425 degree.
Mix pumpkin, sugars, orange peel and spices in large bowl.
Add evaporated milk and eggs.
Mix all ingredients well
Pour pumpkin filling into pie shell.
Bake at 450 degrees for fifteen minutes.
Reduce heat to 350 degrees and bake for 45 minutes more.
TIP: If crust begins to get too brown, loosely cover crust only with foil.

fresh pumpkin pie
INGREDIENTS:
1 medium sugar pumpkin
1 tablespoon vegetable oil
1 recipe pastry for a 9 inch single crust pie
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1 teaspoon salt
4 eggs, lightly beaten
1 cup honey, warmed slightly
1/2 cup milk
1/2 cup heavy whipping cream

DIRECTIONS:
Cut pumpkin in half, and remove seeds. Lightly oil the cut surface. Place cut side down on a jelly roll pan lined with foil and lightly oiled. Bake at 325 degrees F (165 degrees C) until the flesh is tender when poked with a fork. Cool until just warm. Scrape the pumpkin flesh from the peel. Either mash, or puree in small batches in a blender.
In large bowl, blend together 2 cups pumpkin puree, spices, and salt. Beat in eggs, honey, milk, and cream. Pour filling into pie shell.
Bake at 400 degrees F ( 205 degrees C) for 50 to 55 minutes, or until a knife inserted 1 inch from edge of pie comes out clean. Cool on a wire rack.

Pumpkin Roll II
3 eggs
1 cup sugar
2/3 cup canned pumpkin
1 teaspoon lemon juice
3/4 cup flour
1 teaspoon baking powder
2 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon salt
Filling
1 (8 ounce) package cream cheese
4 tablespoons margarine
1 cup powdered sugar
1/2 teaspoon vanilla
8-10 servings
1. Beat eggs and sugar. Add pumpkin and lemon juice, mixing well, then dry ingredients.
2. Spread batter into a greased and waxed-paper-lined 10x15 jelly roll pan. Bake at 375 for 15 minutes.
3. Remove, allow to cool 15 minutes. Roll cake in tea towel or waxed paper and cool 10 more minutes.
4. Filling: Beat cream cheese and margarine; add sugar and vanilla. Beat till smooth.
5. Unroll cake and spread filling evenly.
6. Re-roll and chill at least one hour before serving.

My mom makes this great pumpkin cheesecake. I don't know the recipe, but it's gotten pretty popular, I'm sure if you look for it you can. But I love it. Cheesecake is one of my favorite desserts, and this is the best flavor, except chocolate of course, haha. Good luck.
