There is no such thing as a legal M16 assault rifle for hunting. M16's are made for law enforcement and the military only. It is illegal for any civilian to own an automatic assault rifle unless they posses a special weapons license. The civilian version of the M16 is the AR-15 semi-automatic. You can legally hunt with a .223 cal. rifle as long as you shoot an expanding round.
I wouldn't suggest using such a small caliber for deer unless you knew what you were doing. With a small caliber, shot placement is crucial unlike a larger caliber with excessive shock and muscle tissue damage.

I think you mean the civilian version of the M-16, the M-15?
What are you going to hunt? The 5.56 NATO round is too small to humanely take Texas deer. It is a good varmint gun, though, up to coyote size critters.
Yes, I know, the military uses this caliber to kill people, but the logistic military goal is to disable the enemy rather than 'kill him outright,' thereby inflicting more cost in treatment and man-hours by 'wounding, rather than killing.' In other words, it costs the enemy more to treat a wounded soldier than to bury him.
When hunting your goal should be to put your game down permanently and as humanely as possible. A .308 Winchester (the 7.62x51 NATO) is a much better choice for hunting big game. Both the 5.56 and the 7.62x39 (the AK-47 round) are a bit small for big game.

most states ban the use of 22 and 223 rounds for hunting deer. due to less chance of a clean kill.i would go w/ a 30-30,30.06 or 308 round.if your looking for a ar style hunting rifle. go w/ the ar-10 which is a 308 round.

Most gun stores will carry them. Be sure you are familiar
with the operation of an AR-15 though, because you can
have an accidental discharge (usually called "AD") very
easily if you are not trained on it. You should spend quite
a bit of time on the range (with an experienced shooter to
supervise) before going out hunting with one. Some states
do not allow deer hunting with the .223 caliber, so check
out your State (or province) laws before spending money
on one.
A good source of information is at:
http://ar15.com/
IOW, make sure you know what you're doing, and are safety-
conscious, before buying (or shooting) a weapon!

Most any gun store, but they aren't ideal for hunting, the .223 remington is a very small deer cartridge. The .308 winchester is preferable, or the 30-06.
