i'm restricted to fat 40gms/d, sodium 2400 mg/d, so i'm also suppose to restrit my cholesterol, carbohydrates, sugar, and monitor fiber and proteins. the dietician didn't give me the numbers of what not to exceed on the above items. i don't know where to look to find out. i am unable to contact the dietician, she's on maternity leave right now and i need this info now.

Surely, someone has taken her clients while she is on maternity leave. Call and get reassigned so you have the information specific to your situation.

You need to look at the Glycimic index (GI). This shows how carbohydrates effect your blood sugar. You want to eat things with a low GI, probably below 60 at least but probably should stay below 30-35.

This sight has a good GI chart on it: http://www.glycemicindex.com/

This guy really explains the GI well:

and I would check out his book "Eating yourself slim" He talks about what combinations to eat fibre and proteins with carbohydrates while avoiding fat and keeping your blood sugar leaves in check. This is a popular diebetic diet in Europe.

Ultimately you should ask your doc what GI you should stay below.
