Egg White Omelet with Sauteed Vegetables - 1 serving
2 tsp. olive oil
2 T. diced bell pepper, diced
1/2 c. fresh mushrooms, sliced
5 eggs, separated
1 T. water
Grounded pepper
2 T. chopped green onions
First start by cooking the vegetables in a separate pan. Then Spread olive oil in a saute pan - medium heat. Add mushrooms and then the pepper. Saute for 4 to 5 minutes. Remove cooked vegetables from the pan - make sure that water does follow with them. Separate egg whites from the yolks.Whisk the 5 egg whites with 2 to 3 teaspoons of water in a bowl. Add pepper as you whisk until very well blended. Coat an omelet pan with olive oil over medium heat. Pour egg white mixture into the pan making sure it is evenly spread. Important: continuously push the edges, so that the raw egg white to spread outward. After the egg white is firm, add the sauteed vegetables and green onion. As you fill them into the egg whites press softly. With great care fold the omelet and turn it over for another 30 seconds cooking,
remove from heat. Serve it.
This omelet will not have the same colour as standard omelets.

You Will Need

2 teaspoons chopped fresh dill (optional)
1/8 teaspoon salt
1/8 teaspoon freshly ground pepper
1/2 cup loosely packed, thinly sliced fresh spinach
1 plum tomato, chopped
2 tablespoons shredded nonfat cheddar cheese
Vegetable cooking spray
What to Do
1. Whisk egg whites, water, dill (if using), salt, and pepper together in a medium bowl until soft peaks form. Toss spinach, tomato, and cheddar together in a small bowl.
2. Lightly coat an omelet pan or small skillet with cooking spray and heat over medium heat 1 minute. Pour egg mixture into pan and cook until eggs begin to set on bottom.
3. Spread filling over half of omelet, leaving a 1/2-inch border and reserving 1 tablespoon mixture for garnish. Lift up omelet at edge nearest handle and fold in half, slightly off-center, so filling peeks out. Cook 2 minutes. Slide omelet onto a serving plate and garnish with reserved filling.
