For the mozzarella purist...

MOZZARELLA WITH FRESH TOMATOES AND BASIL

18 slices Mozzarella cheese
18 slices ripe tomatoes
1/2 c. extra virgin olive oil
Juice of 2 lemons
1 tsp. fresh rosemary, or 1/2 tsp. dried
1 tsp. chopped fresh thyme, or 1/2 tsp. dried
Salt and pepper, to taste

On serving platter, alternate slices of Mozzarella and tomatoes. Mix together oil, lemon juice, rosemary, and thyme. Spoon over cheese and tomatoes. Sprinkle with salt and pepper.

PIZZA UNOS DEEP PAN CHICAGO STYLE PIZZA

FOR THE CRUST:
1 cup warm tap water (110-115 degrees f)
1 pkg active dry yeast
3 1/2 cups flour, divided use
1/2 cup coarse ground cornmeal
1 tsp salt
1/4 cup vegetable oil
FOR THE FILLING:
1 lb sausage, removed from the casing and crumbled
1 lb mozzarella cheese, sliced
2 garlic cloves, minced
1 (28 oz) can whole tomatoes, drained and coarsely crushed
3 tsp dried oregano (or 5 fresh basil leaves, shredded
4 tbsp freshly grated parmesan

TO PREPARE THE CRUST:
Pour the warm water into a large mixing bowl and dissolve the yeast with a fork. Add 1 cup of flour, all of the cornmeal, salt, and, and vegetable oil. Mix well with a spoon. Continue stirring in the rest of the flour 1/2 cup at a time, until the dough comes away from the sides of the bowl.

Flour your hands and the work surface and knead the ball of dough until it is no longer sticky.

Let the dough rise in an oiled bowl, sealed with plastic wrap, for 45 to 60 minutes in a warm place, until it is doubled in bulk.

Punch dough down and knead it briefly. Press it into an oiled 15-inch deep dish pizza pan, until it comes 2 inches up the sides and is even on the bottom of the pan. Let the dough rise 15-20 minutes before filling.

Preheat the oven to 500 degrees.

TO PREPARE THE FILLING:
While the dough is rising, prepare the filling ingredients. Cook the crumbled sausage until it is no longer pink, drain it of its excess fat; set aside.

TO ASSEMBLE AND BAKE:
When the dough has finished its second rising, lay the mozzarella cheese over the dough shell. Then distribute the sausage and garlic over the cheese. Top with the tomatoes. Sprinkle on the seasonings and parmesan cheese.

Bake for 15 minutes at 500 degrees.

Then lower the oven temperature to 400 degrees and bake for 25 to 35 minutes longer. Lift up a section of the crust from time to time with a spatula to check on its color. The crust will be golden brown when done. Serve immediately.

Mozzerrella and Carrozza.
Make a sandwich using slced bread and mozerrella. Take 3 eggs and beat add chopped parsley dip the sandwich in the egg as if you were making french toast. Grill on stove in preheated frying pan using olive oil and a little butter. place cover on top, this will keep the heat in and melt the cheese. This is an old Italian favorite, usually served on days the Catholic people would not eat meat, Lent, Ash Wednesday and years ago every friday.

It just has to be bruschetta.
Here's a recipe for you.

Thick cut farmhouse style bread, preferably ciabatta.
Extra Virgin Olive oil
Vine Tomatoes, sliced
Few leaves of fresh basil
I clove garlic, skinned and sliced in half lengthways.
Mozzarella chees ( not buffalo )
Freshly ground sea salt
Freshly ground black pepper

Place about 2 tablespoons Extra virgin olive oil in a small bowl, add the chopped basil, salt and pepper.
Toast the bread on both sides, if using ciabatta, slice lengthways. When golden brown, drizzle each slice with extra olive oil and rub into the bread with the garlic clove.
Top with cheese and grill until melted.
To serve top with the sliced tomatoes and drizzle the olive oil/basil mixture over the top and eat immediately.
This is so delicious and so easy to do - probably one of my very favourite foods.

Mozzarella sticks- Make the bread crumbs first. To make the bread crumbs can either put in the oven or toaster until brown then butter and crumple and put back in to toast for a while, you can season it, if you like. Then cut the mozzarella into sticks. Beat a couple of egg whites. Dip the cheese in the egg whites, then in the bread crumbs, repeat, and then fry them, until golden brown.

Or a deep-fried grilled cheese sandwich. Get the oil hot. I use olive oil. Beat some eggs. Dip the bread in the egg mixture, only on one side, then dip it in flour, put in the oil, the flour side down. Then add the mozzarella cheese to the bread. Repeat the process with the other slice. Put on top and then flip the other side so it's golden brown. I like adding Italian seasoning to the cheese.

4 boneless chicken breast
1 pound of deli sliced mozzerella cheese
1 jar of Ragu spagetti sauce
Put in baking dish, pour Ragu over chicken breast,add mozzerella cheese, there you have a simple dinner.Cooks for about 1 hour on 350*

Pizza! Or eggplant Parmesan, or chicken or veal Parmesan...

For those you bread and fry a chicken or veal cutlet (or sliced eggplant). Then you bake it until it's cooked and then you put some tomato sauce on top and then Parmesan cheese and then mozzarella cheese, and watch it melt. Then eat it.

You can also make a mozzarella and tomato salad with basil and balsamic vinaigrette.

you can very easly make a salad with tomato, mozzarella and fresh basil leaves (and some vinaigrette as a sauce)

last weekend I made a tart with mozzarella :

On the tart you put mustard, then mozzarella, then mushrooms, then some ham cut in small bit, then a sauce made with 4 eggs, some cream, a lot of paremesan cheese, and some pepper.

Cook the tart in the oven, it's quite good.

The best you can do is to keep it simple and let the flavors from the cheese itself dominate. I was in Italy last week and had the best salad ever, without any oil, salt, pepper or vinegar. Just rocket salad, fresh cocktail (cherry) tomatoes and buffalo mozzarella. Simple and delicious!

Scramble eggs with a little milk, salt and pepper to taste. Fold in shredded mozzarella. Pour into a greased pie plate and bake in the oven. Voila- quiche!
