Because they taste good, are convenient, and can be eaten with lots of stuff. But, mostly northern Chinese eat noodles and southern Chinese eat rice. Just that clarification. Also, Chinese noodles are not like American noodles. They taste much better.

It wouldn't be complete meal for Chinese, it can be taken as breakfast, but seldom take as lunch or dinner.
