The skinny one is Buddha before he was Buddha. The fat guy is Ho Tai, a chinese bodhisattva (read Buddhist Saint). Rumor has it the fat guy carried a sack of candy with him at all times for children.
So the skinny guy teaches us how to attain highest perfect wisdom, but the fat guy has candy. As an avowed Buddhist I still could never figure out which is better... until I tried a piece of Chinese candy... it tastes like gummy, orange rind-flavored sandpaper.

Buddha preached in the Middle path - No too much not too low - so he was a person who had a normal body - was not fat nor skinny.
Fat Buddha or laughing Buddha is from Mahayana - I am not sure how it came in to being. Skinny Buddha - there was no such Skinny Buddha - before Sidartha Gauthama attained Nibbana, he went on different meditation methods - skinny was when he tried to mediate without eating !

The man who supposedly became Buddha was a dead beat dad. He ran out on his wife after she had twins and in his wanting peace and quite created a religion that made nothingness the goal. He died lonely and yet even though he ran out on his family he was somehow rewarded in his perception of what eternity is supposed to be.
So neither. The guy is dead and who the hell really believes that your soul will be reincarnated as an animal if you're not a good buddhist. Also, who determines what kind of animal you become according to your evil deeds. But hey just light some incense, bow a certain way, leave a little money and some fruit at a statue of a man riding some sort of animal and all will be right again...riiiiiight.

there are many types of buddha and represent different things like power and so on
