You probably can't do it. But I can't find a definitive answer. In the US it's easy in many states to be married by any ordained person no matter how established the ordaining organization. In California, for instance, anyone ordained on the internet can do it. Countries with more traditional religious influence, however, can be much tougher. For instance, in Greece there seems to be no provision for a religious marriage between members of different faiths. And you aren't a municipal official so you wouldn't be able to do a civil marriage.

The latter doesn't say who can marry, but from the restrictions on the marriages by different faiths I get the distinct impression that they are very strict about how religious weddings can happen.
Your best bet may be for them to do a quicky civil wedding at home and then do a private ceremony of your own in Greece that all can consider the real wedding. It may not be as satisfying a solution, but it lets them take control of the ceremony with a minimum of expense and paperwork and a maximum of control over the particulars.
Contact your local Greek Consulate, they may give you the quickest answer.

In the UK the minister doesn't need to be ordained but an authorised person or registrar (in some buildings this is the minister but most times it is not) must be present to record the legal parts of the service. The important thing is not that a minister of religion is present but that a representative of the state hears both parties say that there is no legal reason they shouldn't marry and that they take each other has lawful husband/wife

If your friends are US citizens then you'll also need to look into which countries are legally recognized as places to be married. I didn't know there was such a thing, but when looking at a cruise to an island to get married the travel agent said only certain places would be valid for a marriage that would be legally recognized in the US.

if you want get married in church ask your priest/pastor, he should be able to do all paper work, but you should be ready for a lot of paper things too, my cousing got married abroud too.
