Pressure canned foods will last until they are eaten. My grandmother used to can foods and store them in the garage and as long as the seal held they would be good when opened . Some of the stuff was 5-8 years old. I don't recall anyone dying from the foods she canned. I would just advise to reheat the vegetables well and fruit you can just eat out of the jar.

Sometimes a very long time. The key is don't use it if the seal pops when you put pressure on it. Destroy it and don't use it. If the seal is still tight and doesn't pop when you test it most likely the product is still good.
