Have 500lbs of salmon for a Pow Wow & it was given to me uncleaned. It's tues & the Pow Wow isn't until This week-end.
I wasn'tgiven proper containers The tote would not fit in my truck
So I must freeze & not sure of what to do

I used to be a production manager at a hugh seafood company in Chicago.

This is what we did when we has to freeze fresh salmon.

First you should gut, scale, and de-head the salmon. All that junk will ruin the salmon meat. If you need to keep the salmon head, then get rid the gills.

Once you have done this, rinse the salmon thoroughly until it is not slimmy. Then, use paper towels to dry your salmon.

Once dry, wrap the salmon in butcher paper (white). Now, freeze the salmon for at least one day before you go to the Pow Wow because the meat may not be totally frozen all the way through. If it is not totally frozen, the salmon could spoil on the inside.

Yes, freezing Salmon whole could cause to get sick after cooking it. I'm not sure if you know how to clean fish or not, but the easiest way would but whats called head on and gutted. Just take a sharp knife and cut the collar then cut straight down the stomachh make sure to clean out the guts and as much blood as possible ( this we make a mess ) then the stomac with ice and wrap it tight and your ready to freeze it ( This makes the fish taste just as fresh as when caught )!

You need to get some extra hands on board and start cleaning those fish fast! That is if they have not already spoiled, you will know this by the smell.
You might want to opt for cutting off fillets instead of cleaning that many, could save you some time. Good luck

It should have been cleaned when it was caught. Depending on how long it has remained uncleaned, it may be spoiled. Please check on this.
But even if it is good, you will want to clean it prior to freezing. A cleaned fish will take less time to thaw then a whole fish.

If you are really in difficulties, freeze the Salmon as it is and wash it after thrawing.

You definitely clean fish before you freeze it.
