Because the target acquisition radar only faces forward. Down and dirty is that the aircrafts radar picks up the target and feeds the information to the missile. Once that's done, the pilot can fire the missile. And then there are some missiles that you have to keep the radar pointed at the target. It all depends on the missile system.

For aircraft the standard attack direction is forward (thats why the cannon(s) and missile launchers are all fixed pointing forward). The common sense is that fighter pilots always gut down or shoot down their enemies first before they can get behind ya, but in case they do thats why you do evasive maneuvers and you have ECM and decoy systems to fool enemy missiles with.

Most of the time your buddies are to your rear or on your wing , the enemy is usually in front of you, If you let the enemy get to your rear he will have already launched a missile at you ! plus all the nasty ordinance that he has.

Because there would be no accuracy for missiles like those during a dogfight. The best you could do was small arms or ballistic fire.
