The seaweed that comes with most sushi dishes is a dried seaweed. It has a totally different taste than fresh seaweed.
Japanese use fresh seaweed in salads and some soups. It is great. If you like just the dried seaweed, you can get it in any Asian market. It's really cheap. I wrap chicken with it.

California Rolls are good, not too much raw fish, avocado, imitation crab, and cucumber. Um.. Or you can just make little rice balls out of some seaweed and rice. You can buy all the stuff at Safeway. I haven't tried it, but Onigiri is a rice ball with plum sauce in the middle wrapped in seaweed.

Miso is a good option. It's a soybean broth with tofu cubes, green onions, and of course sea weed. Also, try sea weed salad. Not every place makes the best sea weed salad. So, don't get turned off if you don't like it the first time.
If raw fish is your problem with sushi, there are plenty of alternatives. Cucumber rolls, avocado rolls, umeshiso-maki (plum paste and Japanese mint rolls), tamago (sweet egg) nigiri, and many more.

If you go to the Japanese specialty store, or maybe just in your local supermarkets ethnic section, look for the snacks....cruncy yummy bags of puffed rice and other ingredients wrapped in seaweed or made with them.
