(**wait and buy the brisket on sale; you get a lot of meat for a litlte cost!**)
Brisket with Carrots and Onions
6 to 7 pounds beef brisket
2 Tbsp. kosher salt
2 tsp. freshly ground black pepper
1 tablespoon minced garlic (4 cloves)
2 tsp. dried oregano leaves
1 pound carrots, peeled and cut into 2-inch chunks
8 stalks celery, cut into 2-inch chunks
6 yellow onions, peeled and sliced
6 fresh or dried bay leaves
1 (46-oz.can tomato juice
Preheat the oven to 350 degrees F.
Place the brisket in a heavy roasting pan. In a small bowl, combine the salt, pepper, garlic, and oregano. Rub the mixture on the brisket. Pile the carrots, celery, onions, and bay leaves on the brisket and pour in enough tomato juice to come about 3/4 of the way up the meat and vegetables. Cover the top of the pan with 2 sheets of parchment paper, then with aluminum foil. (The tomato juice will react unpleasantly with the aluminum foil if they touch.)
Bake for 3½ hours, or until the meat is tender. Remove the meat from the pan and keep it warm. Place the pan on 2 burners and boil the vegetables and sauce over medium heat for another 30 minutes, or until the sauce is thickened.
To serve, slice the meat across the grain. Serve with the vegetables

Chicken Scampi
(easy but delicious and elegant)
1/2 cup butter
1/4 cup olive oil
1 tsp dried parsley
1 tsp dried basil
1/4 tsp dried oregano
3 cloves garlic, minced
3/4 tsp salt
1 Tbsp lemon juice
4 boneless, skinless chicken breast halves, sliced lengthwise into thirds
In a skillet heat the butter and olive oil on medium high heat until butter is melted. Add parsley, basil, oregano, garlic and salt and mix together. Stir in lemon juice.
Then add chicken pieces and saute for 3 minutes or until white. Lower the heat and cook for about 10-15 mintues or until chicken is cooked through. More butter can be added if needed. Serve chicken over hot angel hair, or other pasta and pour some of the sauce over it all.
Make sure you have some bread to 'sop' up the sauce! This is really good and so quick and easy, but it has a nice presentation on the plate.

Bisquick will make a lot of foods for cheap. Add a little sugar and vanilla extract to pancakes and waffles, melted butter and heavy cream (or coffee shop 1/2 & 1/2 if you know what I'm saying) to bisquit recipies.
Grilled pineapple (soak in maple syrup first) and any grilled veggies.
Cook pasta (any style) and add the same ingredients (chopped) you would add to a pizza: garlic, green pepper, onion, mozzarella cheese, tomato sauce. Stir. Micro it just long enough to melt the cheese.
Really good short grain rice topped with a little soy sauce, a couple of drops of sesame oil and pinch of sesame seeds, yum.
Try adding a little cheddar or jack cheese to eggs b4 you scramble them, Dont forget the salt & pepper.
For desert,
Butter one side of bread, spinkle with a teaspoon of sugar and a little cinammon and toast on "top brown only" setting of your toaster oven.
For snacks,
Celery stalks with peanut butter and raisans.
Grind up parmesian reggiano cheese onto a piece of foil, add S&P and bake at 350 for about 10 min. It's a little price for the cheese, but a little goes a long way and it keeps well.
That ought to keep you for a while.

Heres A good one:
WHAT YOU WILL NEED:
4 slices bacon, chopped into 1-inch pieces
Salt
1 pound spaghetti
4 (8-ounce) NY strip steaks
Ground black pepper
2 tablespoons extra-virgin olive oil, 2 turns of the pan
5 tablespoons butter, divided
4 cloves garlic, minced, divided
2 shallots, finely chopped
2 tablespoons all-purpose flour
1 cup chicken stock
1/4 to 1/3 cup cream or half-and-half, eyeball it
8 ounces blue cheese crumbles
2 to 3 tablespoons chopped sage leaves
2 tablespoons chives, chopped, a palm full
2 cups arugula, a small bunch, cleaned, trimmed and shredded
HOW TO DO IT:
Put a large pot of water on the stove to bring to a boil for pasta.
Preheat broiler to high with rack on top shelf.
Preheat medium skillet over medium-high heat. Add chopped bacon and cook until crisp.
Salt water for pasta and add spaghetti to the pot. Cook to al dente, with a bite to it.
Season the steaks with salt and pepper on both sides and arrange on slotted broiler pan.
Remove bacon to paper towel lined plate with a slotted spoon and drain off most of the fat, return pan to heat and reduce heat to medium. Add extra-virgin olive oil, 2 turns of the pan and 1 tablespoon butter. When butter melts into extra-virgin olive oil, add in 2 cloves garlic and the shallots, saute for 3 minutes.
Arrange steaks on the broiler pan. Place under broiler - leave door to oven cracked ajar to limit flare ups and smoke. Cook 4 minutes on each side for medium rare, up to 5 to 6 minutes on each side for medium well doneness.
To the garlic and shallots, add in flour and cook a minute more. Whisk in stock, bring to a bubble, about 30 seconds then stir in the cream. When cream comes to a bubble, add in blue cheese and sage and a few grinds of black pepper. Stir until cheese melts. Reduce heat to lowest setting.
Soften 4 tablespoons butter in microwave on high for 15 seconds. Mix in chives and 2 cloves minced garlic and reserve.
Remove steaks from oven and let rest 5 minutes. Place 1/4 of the chive and garlic butter mixture on each steak to melt down over the meat as they rest.
Drain pasta and toss with sauce to coat and combine evenly. Taste to adjust seasoning.
Serve steaks with pasta alongside. Scatter the arugula and bacon bits across the top of the pasta.
