INGREDIENTS
Burgers
1/3 cup coarsely chopped onion
2 cloves garlic, peeled
1 teaspoon ground cumin
1 1/2 cups black beans (or black soybeans), rinsed and drained
1/2 cup coarse dried breadcrumbs
1/3 cup chopped fresh cilantro leaves
3/4 cup walnuts, toasted and finely chopped
Kosher salt and freshly ground black pepper, to taste
1 large egg, beaten
2 tablespoons olive oil
4 English muffins
Corn Salsa
1 cup corn kernels, fresh or thawed
1/2 cup seeded and diced tomato
1 scallion, chopped
1 1/2 tablespoons chopped fresh cilantro
2 teaspoons seeded and minced jalapeno chile pepper
2 teaspoons fresh lime juice
1. In a food processor fitted with a metal blade, place onion, garlic, and cumin; pulse until coarsely chopped. Add beans, bread crumbs, and cilantro; pulse until just combined (don’t puree).
2. Transfer mixture to a bowl; stir in walnuts. Season with salt and pepper. Fold in egg and stir until combined. Form into four 3 1/2-inch patties. (If burgers seem very wet, add 1/4 cup bread crumbs.) Chill patties, covered, at least 1 hour, and up to 1 day.
3. Meanwhile, in a small bowl, stir together the salsa ingredients. Add salt to taste. Set aside.
4. In a large skillet, heat oil over medium heat until hot. Cook patties until light brown, 4 to 6 minutes on each side. Split and toast muffins.
5. Place a patty on muffin half, add some salsa, and top with muffin top. Serve warm.
Bangkok Bean Burgers With Peanut Cilantro Sauce
1 lb firm tofu
2 cups cooked black beans, well drained
3/4 cup quick-cooking oats, uncooked
1/2 cup red onion, finely chopped
1/2 cup carrots, finely grated
1 tsp plus 1 tsp grated fresh ginger root
2 tsp tarmari or soy sauce
2 tsp packed brown sugar
2 cloves garlic, minced
1 to 3/2 tsp red pepper flakes
vegetable oil
flour for dusting thin slices peeled cucumber
Squeeze tofu in paper towels to discard excess water. Mash tofu in a large bowl. Add rest of ingredients except for oil, flour, and cucumbers. Mix well. Lightly brush both sides of patties with vegetable oil and dust with flour. Brush gill rack with oil. Cook over medium-hot coals about 4 minutes on each side. Serve on toasted buns and top with Peanut Cilantro Sauce and cucumber slices.
peanut Cilantro Sauce:
3 Tbs natural crunchy peanut butter
3 Tbs fresh lemon juice
1/4 cup fresh cilantro, minced
In a small bowl, blend peanut butter and lemon juice. Mix in cilantro to combine.

Black Bean Burgers
Serves 2
1 15-ounce can black beans, drained
1/4 cup diced and sautéed onions
2 slices multigrain bread, finely crumbled
1/2 teaspoon each of garlic powder, black pepper, and onion powder (optional)
1/4 teaspoon salt (optional)
1/2 cup cracker crumbs
In a large bowl, mash the drained black beans. Add the sautéed onions, crumbled bread, and spices. Mix thoroughly. Add about 1/4 cup of cracker crumbs (or just enough to be able to form patties from the mixture). Using your hands, form the mixture into 1/2-inch thick patties. For a breaded burger, gently coat each patty with more cracker crumbs.
In a lightly oiled non-stick pan, fry both sides of the patties. Serve with a garnish of lettuce, tomatoes, avocado, and any other condiments on buns or over a bed or rice.

Zesty Black Bean and Rice Burgers
Makes 4
Ingredients
1 cup cooked instant rice
1 15-ounce can black beans, drained and rinsed
1/4 cup chopped onions
1 tablespoon chopped cilantro
2 tablespoons salsa
4 whole wheat hamburger buns
Directions
1. Mash beans with food processor or fork or potato masher. With fork, mix in rice, onion, cilantro and salsa.
2. Spray large nonstick skillet with cooking spray. Heat to medium-high heat.
3. Use 1/2 cup mixture for each patty. Flatten onto skillet. Cook 4-5 minutes on each side, or until lightly browned.
4. Serve with salsa, sour cream, lettuce, sliced avocado.

1 can (14 oz.) black beans
1 small onion
2 cloves garlic (crushed)-substitute appx. 1/4 tsp. garlic powder or minced garlic if desired
2 tsp. cajun seasoning
1/2 cup seasoned bread crumbs
1/4 cup egg substitute (or one whole egg)
1) Place onion and garlic in food processor and process untill fine.
2) Add well drained black beans.
3) Process untill beans are in mashed consistancy
4) Place in medium mixing bowl, add cajun seasoning, bread crumbs and egg substitute.
5) Mix thoroughly and shape in to 4 patties.
6) Place in well-greased grill basket, or grill. Cook 5-7 minutes on each side. BROIL in the oven- 10-12 minutes each side, on a baking sheet covered in aluminum foil, and sprayed with a non-stick cooking spray. (this one makes for easy clean up)
I discovered this recipe is a big hit after my fiance was craving Chili's black bean burgers. He said they are VERY good, and quite comparable. Hope you enjoy them too.
