I use only Russet potatoes to make french fries. I usually hand cut them, skins on or off, your preferece. Then I deep fry them for 8 minutes to "blanche" them. I remove them from the fryer and let the cool right down. Once cooled I put them back in the fryer and fry until they are a nice golden brown, and crispy. Remove from fryer, and salt right a way. This process may seem a lot, but in the end you get a pretty tasty bunch of fries, that are really nice and crispy. Learned this technique from a "Chip Wagon"

After you have cut potatoes for french fries, soak them in cold water in the fridge overnight. Drain the potatoes, dry thoroughly, then sprinkle them with cornstarch. Deep fry. These are the crunchiest, most delicious french fries
that I've ever tasted!!

I usually fry them almost all the way, then take them out. Toss them onto a cookie sheet (make sure they are still slightly damp from the oil you used for frying, and don't pat them off or anything), and sprinkle the top with some of your favorite flavors. I use parmesan cheese, or onion powder, paprika, garlic, even a grill seasoning of mixed spices. Then just put them in the oven for about 5-10 minutes for the seasonings to blend in or the cheese to melt.

ok this a way i enjoyed chips much better than the usual way.
i liked it when the potato is sliced in uqual proportionate shape and then fried without salt.
i love to eat that while i'm having other dishes like eating rice with a curry of having a pasta dish.

There's not a whole lot you can do with the potato in a french fry state- however, you can tasty them up some. I usually put mine in a pan with a little oil in the bottom and let the oven do it's thing. When they come out - dress them up with 'garlic powder', a little season salt or lemon pepper and parmeasan cheese. Yum., Yum! Melt in your mouth goodness!!

With the skin on, liven it up with herbs (oregano, rosemary) and spices (chili powder, paprika) plus the usual salt & pepper. Dip them in beaten eggs, roll in Japanese breadcrumbs and fry in hot oilive oil. Use honey mustard or cool ranch as dip. Yummy!
