Looking for a recipe for chipotles Tomatillo Green-Chili Salsa, please do not post alternatives. I am just looking for this one.

here's what u'll need:

3 pounds fresh tomatillos
1 can (26 oz.) mild green chiles
2 onions, quartered
6 garlic cloves
1 bunch cilantro, chopped
salt and pepper to taste

now here's the secret:

Put tomatillos, onion, garlic and green chiles (along with liquid from the can) in a saucepan. Add enough water just to cover. Bring water to a boil, then decrease heat and simmer for about 10 minutes. Cool slightly. Strain, reserving the liquid.

Transfer tomatillo mixture to a blender or food processor and puree, adding just enough liquid to give it a thick, smooth consistency. Season with salt and pepper and let cool. After cooling, mix in chopped fresh cilantro.

P.S. this makes About 8 Cups

MMM I love tomatillo salsa and Chipotle peppers....heres how I make my salsa...

6 tomatillos peeled and washed
1 sm red onion
1 tomato, seeded (dont have to use if you just want the green)
3 cloves of garlic
1-2 Canned chipotle peppers
a handful of fresh cilantro chopped
1 T. Sugar
Juice and zest of 1 lime
and salt and pepper

Chop the tomatillos and seeded tomatoes, dice the red onion, mince the garlic and chipotle pepper(s), and roughly chop the cilantro (no stems) and add to a bowl. Stir in the sugar (this gives it a subtle sweetness and helps cut out all the acid. Zest the lime and add it and the juice. Season with the salt and pepper. Let sit at least an hour to let all the flavors mend together.

I usually use Jalepenos in mine but the chipotle is a super good idea and I don't see why you can't use them interchangeably seeing as a chipotle is just a smoked jalepeno....

Tomatillo Salsa (Cadwallader)
Ingredients:
3 Jalapeno peppers, stemmed,
-seeded, chopped
2 oz Tomatillos, drained
1 White onion, cut up
2 sm Garlic cloves, chopped
1/2 c Coarsely chopped cilantro
3 tb Fresh lime juice
1/2 ts Salt
1 pn Sugar

Instructions:
Combine peppers, tomatillos, onion, garlic and cilantro in a processor; pulse 10 times. Scrape down sides of bowl. Add remaining ingredients. Pulse several times until peppers and garlic are minced. Refrigerate briefly before serving.

An easy mild salsa recipe, using fresh and canned tomatoes, and green onions. INGREDIENTS: * 1 can (14.5 ounces) stewed tomatoes, sliced * 2 large green onions, finely chopped * 1 large ripe tomato, cored, peeled, seeded, and diced * 1/2 teaspoon salt * 1/2 teaspoon black pepper * dash Tabasco sauce, or to taste PREPARATION: Combine stewed tomatoes in saucepan with onions, fresh tomato, salt and pepper. Bring just to a boil. Boil hard for about 1 minute . Remove from heat. Blend half of the mixture until finely chopped. OR 1 bunch green onions (sliced thin) 1 sm. can black olives (chopped) 1 sm. can green chilies (diced) 3 med. tomatoes (chopped) 1 tsp. garlic salt 3 tbsp. olive oil 1/4 c. salad vinegar (Heinz) Combine all ingredients. Refrigerate overnight. Serve with tortilla chips. Good luck, these two recipes are both excellent!!!
