It's one of my favorites. Here is a good recipe for it. I like to take some fresh basil and toss it in my soup bowl at the table while I'm eating. I also like to add some 'Sriracha', you know, that bottle of hot red chile sauce they have at the tables in the restaurants. You can probably find it at a local Asian store, heck I found mine in just the regular supermarket.
Beef Pho
INGREDIENTS:
4 pounds bone-in beef shank
1 onion
5 slices fresh ginger root
1 pod star anise, whole
1 teaspoon salt
2 1/2 tablespoons fish sauce
1 (8 ounce) package dried rice noodles
1/2 pound cooked beef sirloin, thinly sliced
3 green onions, chopped
1 1/2 cups fresh bean sprouts
6 sprigs cilantro
DIRECTIONS:
In a large pot over medium heat, bring beef shank and 3 quarts water to a boil. Skim off foam. Reduce heat, cover and simmer 4 hours.
Preheat oven broiler. Place unpeeled whole onion under broiler until soft. Remove and peel.
Stir onion, ginger, anise, salt and fish sauce into beef mixture.
Bring a large pot of lightly salted water to a boil. Add rice noodles and cook for 8 to 10 minutes or until al dente; drain.
Divide noodles into three serving bowls. Place cooked sirloin on top of pasta in bowls. Sprinkle green onions, bean sprouts and cilantro evenly in bowls. Strain beef broth and divide evenly between serving bowls, pouring over assembled ingredients. Serve at once.

There is this place in Long Beach, CA that a lot of us from work used to frequent. They had fantatastic Pho, but they sold the place. Wish I had a recipie. I have seen Pho soup base in the asian section of some grocery store, but never tried it.

I love PHO... The best is in Vietnam. To make it, quick and easy western style... I'd say boil some rice noodle in beef boullion... Add some sliced roast beef to it... add some greens and onion to it... Thats for Pho Bo... do the same for Pho Ga or Pho Heo.. Bun bo Hue, #1

Pho is really good. First, make some good broth (chicken or beef). You will need some lime, meat (chicken, shrimp, beef, pork), rice or egg noodles, bean sprouts, cilantro, hoisin sauce and hot sauce.
