California roll is a good 'beginner' sushi, since it has the imitation crabmeat but no true raw fish.
Most (if not all) true sushi contains various kinds of raw fish. Different restaurants invent their own americanized combinations which are frowned upon by purists, but sometimes taste really good. For example, a Philadelphia roll has lox and cream cheese! If a restaurant includes these exotic/Americanized versions, it will include a description in the menu.
For true sushi, it is usually named by the type of fish (which may be given in Japanese or in English). My favorite is tuna, which is totally different from canned tuna. It is a deep red, and actually looks more like beef.
Other ingredients often added (without special mention in the menu) include cucumber, (which adds a pleasant texture) and tiny shreds of marinated vegetables which add a slight piquancy that is a nice seasoning to the fish.
Sometimes you will see a sushi roll that is sort of rolled inside-out -- the ingredients are the same, but it ends up with rice on the outside instead of seaweed. In this case, the outside of the rice is often decorated and flavored by rolling it in sesame seeds or caviar (which is often an orange color). Personally I prefer the sesame seeds.
I prefer to only eat sushi at restaurants that specialize in it -- it's not worth trying old or poor quality fish!

California rolls are good, they usually put things like cucumbers; carrots; a bit of tuna in it. In fact, I'm having sushi for dinner tonight and it's called a "Maki combo". Everything in it is cooked because I don't eat raw fish. The combo includes roast beef sushi, crab sushi, tempera sushi (with egg), and veggie sushi. Everything's good, so that's why I usually order the Maki combo.

I, too am allergic to shellfood,and don't care much for most fish. I do love canned tuna, and deep fried breaded fish, shuch as fish & chips.
I have tried albacore tuna steaks, and found them mostly just OK. I'm sure it was just a matter of taste.
What I REALLY love is seared ahi tuna. To me, it has the taste and light texture of a very expensive filet mignon steak!
I definetly recommend you try that.

California rolls are good. I don't know how they are "supposed" to be made, but I've had it both with imitation crab meat and without. Mostly veggies - carrots and avocado are in it with rice around it.

Unagi. Smoked eel with a little bit of teriyaki sauce.
Toro, belly part of the tuna. Expensive but quite delicious. It is very tender and melts in your mouth.

You should try a california roll.It has the rice,crab stick,and cucumber,wrapped in seaweed.That is usually a good place to start.
