I need to find a hardwood cane or walking stick with a very heavy brass knob for protection or exercise.?

But rather than the brass knob, go for the one with the brass duck or eagle head. The beak makes a more formitable weapon. The other thing to look for in regards to using the cane as a defensive weapon is to make sure the shaft is not smooth. You want bumps and some sharp edges if possible. See some examples here:
