Very simple - I love shrimp so I am always trying new dishes with shrimp. Boil some rice, noodles, or pasta. Cook until done and place aside. On hand, I will have a pack of frozen broccoli with cheese and a large bag of frozen deveined shrimp. While the shimp is thawing out (sometimes placing in cold water helps), I heat up the broccoli in a large skillet and ten minutes before done, put the shrimp, diced tomatoes, onions, garlic in the pan. Let simmer together for about 10 minutes or until shrimp is pink. (cooked too long - shimp will be tough) Add splash of lemon juice (for tartness) and a sprinkle of ginger - and Voila - instant broccoli/shrimp dinner.

Broccoli and Tasso Cheese Bisque
Makes 6 servings
Ingredients:
1/2 cup vegetable oil
1 pound Tasso ham, cubed
1 cup chopped onion
3/4 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1/2 cup chopped celery
1 tablespoon minced garlic
1 cup flour
8 cups chicken broth, heated
2 cups heavy whipping cream
1 pound cheddar cheese
1 pound fresh broccoli cut into pieces
2 teaspoons cajun seasoning
1/2 teaspoon white pepper
1/4 cup minced parsley
1/4 cup chopped green onions
Preparation:
Heat vegetable oil in a large saucepot over medium heat. Add Tasso ham and cook for 5 minutes. Be careful not to brown it.
Add onion, red and green bell pepper, celery and garlic. Cook for 5 minutes.
Add flour and stir until a roux is formed. Do not brown flour. Then add the heated chicken broth and whip until a light sauce is formed. Simmer for 5 minutes.
Stir in heavy cream, cheddar cheese, broccoli, Creole seasoning and white pepper. Cover and simmer for 10 minutes, stirring occasionally. Add parsley and green onions.
Divide into 6 large bowls and serve.

Brother Hugh Vincent’s Broccoli Pesto
Boil a lot of broc florets.
Save water to boil rigatoni in
Pick off the round bits of broc and throw them in a pan with olive oil and chopped garlic
Add anchovies (2 or 3)
Mash together in pan using potato masher.
Toss in cooked rigatoni
Yum

Turkey Divan
2# Thick Sliced Turkey Breast
*1 Lg Bunch Steamed Broccoli
*Layer brocco;i on bottom of Pam sprayed Rec casserole. cover w/ slices of turkey.
*in 2qt sauce pan over low heat melt 2T butter or oleo
*add 2T flour and create a smooth rue
*add 1C half and half/ stir until it begins to thicken
*add 1C Dry sherry or Chardonnay and 2T Dijon mustard, salt and pepper to taste
stir and allow to come to a slow boil-remove from heat and stir in 1/2 C grated Parmesian
*pour mixture over turkey and cover w/ foil
*bake in 350 oven covered for 30 mins - uncover and bake another 30 mins
* allow to stand for 5 mins before serving

I toss broccoli into my Progresso Lentil or Split Pea soup. You can do just about anything with it...au gratin it, quiche it, omelette it, bread, deepfry and dip it, blanch and dip it, stir fry it. It's a great food!

Well...it was trees for my kids' HO train set...but I covered them with lacquer. I can't imagine that they tasted very good.
