Wow, loads of tips for American curry.... you said your Bf is English, well in that case the chicken curry he will want is a Chinese one,,,, it's sort of normal here to come out of the pub and go to the Chinese, sometimes Indian for a curry..
I don't know recipes, but first ask if he prefers Indian of Chinese, then go find a book..... cant say those American recipes are doing it for me....

Chicken Curry)
Yield: 6 Servings
Ingredients
4 green cardamon pods (up to
-8)
2 lb chicken
1 c plain yogurt
6 cloves, whole (up to 8)
1 ts salt
2 ts cinnamon
1 ts turmeric
1 md onion
6 szechuan peppercorns (up to
-8)
4 tb vegetable oil
2 bay leaves
5 garlic cloves (or less, to
-taste)
1/4 ts ginger root
1 ts black pepper
1/4 c tomato puree
1 c water
Instructions
Thoroughly clean the chicken pieces, then marinate with yogurt and
salt for 1 hour.
Meanwhile, prepare the spices. Chop the garlic and ginger, then add
black pepper to this mixture. Set aside in a small bowl.
Near the end of the hour of marinating, melt the shortening in a
coverable skillet (woks will do). Chop the onion and brown in the
skillet for about 10 minutes.
After the onions are ready, add the garlic/ginger/pepper mixture. Let
simmer for approximately 5 minutes, then add the chicken. Let the
chicken simmer for approximately 30 minutes or until cooked.
Add the cardamoms, cloves, cinnamon, turmeric and bay leaves. Leave
them whole. Simmer for 5 minutes. Finally, add the tomato puree and
water to the mixture and cook until the mixture has thickened. Serve
with rice and chapati.

These recipes don't sound like the chicken Curry I make. We call it rice curry even though the recipe says curried chicken but we serve it with rice. Can't find the recipe but it is made with chicken cooked in oil then add curry powder, garlic powder, chicken bouillon cubes, onions if you like but I use onion powder and simmer then add celery and apples to it and cook until tender.when done add a thickening like corn starch or flour and cook until bubbly. Wish I could find the recipe because I am probably forgetting something important...just ate it a few days ago too...... Hey, I'll ask my online bf from England if he knows.

Chicken With Curry Sauce)
The prep and cook time does not include the time to bake a chicken. I usually start with a fresh hot rotisserie chicken from the grocery store.
1 chicken, seasoned with salt and pepper and baked in oven (or use a cooked store rotisserie chicken)
1 onion
6 tablespoons butter
1 teaspoon curry powder
1/4 cup flour
2 cups chicken stock (canned broth or bouillon is OK)
1/4 cup half-and-half cream or milk
4-6 servings
35 minutes 15 mins prep
Slice and saute onion in butter until lightly browned.
Add curry powder and flour and stir for a few minutes to absorb the butter and brown a bit.
Slowly add stock, stirring constantly to avoid lumps.
Simmer for approximately ten minutes or until thickened.
Meanwhile cut chicken into serving pieces and arrange on platter.
Add creme or milk to the sauce, stir and pour sauce over chicken.
Serve with rice.

Chicken Curry
Ingredients:
* Chicken, cut - 1
* Onions sliced - 2
* Bay leaves(tej patta) - 2
* Cinnamon - 1
* Cloves - 4
* Tomato chopped - 1 big
* Turmeric - 1/4 tsp
* Salt & chilli powder - According to taste
* Oil - 2 tablespoon
Method:
Marinate the chicken in salt, turmeric, chilli powder and 2 tbsp of oil, for an hour. Heat oil in a big vessel, now add the bayleaves, cloves and cinnamon. Then add the sliced onions and fry till golden. Add the marinated chicken and fry on high heat for 2 mins. Reduce the heat, cover the vessel and cook for 5-6 mins. Now add the chopped tomato, cover again and cook till done. Garnish with cilantro.

Chicken Curry.
One chicken, 2 tablespoons butter, 1 onion, 1 tablespoon curry powder, 2 ounces sweet almonds, ½ teaspoon salt, 1 dessertspoon lemon juice, ½ pint of water. Cook the sliced onion in the butter, it it must not brown. Then add the chicken cut in pieces and sprinkle on the curry powder, stir and cook it 5 minutes. Blanch almonds and pound with a little water; when fine add remainder of water and grind. Strain this through a cloth and add to chicken with salt and simmer until tender. When ready to serve add lemon juice. Serve with rice. Veal may be prepared in the same way.

dont know if this is what youre looking for but here is a chicken curry recipe that i think is yummy...
2-1/2 lbs. skinned chicken legs, thighs and divided breasts
3 t salt, divided
1/2 c vegetable oil
1-1/2 c finely chopped onion
1 T minced garlic
1-1/2 t finely minced fresh ginger root
1 t ground cumin
1 t turmeric
1 t ground coriander
1 t ground cayenne pepper
1/4 t ground fennel seed
1/2 c water, divided
1 c chopped fresh or canned tomatoes, drained
2 T finely chopped fresh coriander, or parsley
1/2 c unflavored yogurt
1/2 t cinnamon
1/4 t ground cardamom
1 T fresh lemon juice
Directions:
Rinse chicken pieces, pat dry with paper towel and sprinkle with two teaspoons of the salt. In large, heavy skillet, heat oil until a drop of water flicked into it sputters instantly. Add chicken and fry three to five minutes, turning pieces with a spoon until they are white and sightly firm. Transfer chicken to plate and set aside. To remaining oil, add onion, garlic and ginger and fry until onion is soft, about 5 minutes. Reduce heat to low, add cumin, turmeric, coriander, cayenne pepper, fennel and one tablespoon water. Fry for one minute, stirring constantly. Stir in tomatoes, fresh coriander or parsley, yogurt and remaining teaspoon salt. Increase heat to moderate and add chicken and any juices that have accumulated on the plate. Pour in remaining water and bring to a boil, turning chicken pieces to coat evenly. Sprinkle top with cinnamon and cardamom, cover tightly and simmer until chicken is tender, about 20 minutes. Arrange on platter and sprinkle with lemon juice. Makes 4 to 6 servings.
