What is the correct process to polish granite counter tops edges?

I had a installer install granite counter tops but the ogee edges are not as polished as the top. I want to know what grit level the installer should have used to get the correct finish. It appears he stoped at 600 and put gloss liquid. what is the correct process that can be done with a hand polisher on the job sight?

I believe it requires a multi step process that uses different coarseness of grit of polishing compounds. I would not use a machine polisher as you may wear down the edge unevenly causing a waive effect
