I love the fact that you took the time to mention that you're country fans, meaning that you would more than likely like a country song, and 99% of these are non-country, or so up-beat they aren't even realistic.
Country is probably the easiest genre to find songs like this from, but therefore the hardest to narrow down. Also, a lot of the songs you look at are going to be kinda cliche' and over-done. Don't let that stop you, if you like it use it. But if you want to be different, pick something that just says I love you instead of something that screams WEDDING (i.e. Shania Twain's From this Moment).
this is a list, of what I can think of off the top of my head, but don't be afraid to use some search engines or go to yahoo radio and listen to the country or the love stations, make a list of your favorites that you come across and take the list to your sweetie. From there you should be able to draw lines through half the list, and talk about things from there. Oh, and if you want to get really good, print out lyrics for all the songs on your list, in case one of you doesn't know the song as well.

Then pick a country music song that you both like. Try and find something that has special meaning to you, like the song you had your first dance to, or a song that reminds you of your first date, something special and romantic like that. Pick something that you and your fiance like and can dance to. Its your wedding, so things should get done your way.
