Assuming the manicotti is filled with cheese, and served with a red sauce...

I'd add some nice steamed or grilled asparagus, as well as a nice loaf of bread with olive oil/balsamic/garlic to dip it in.

Baby spinach lightly sauteed with a little garlic, olive oil and a pinch of crushed red pepper. Grilled or broiled asparagas Either would be a nice and light accompanyment to the rich manicotti.

I would serve a crisp, cold garden salad with italian dressing, warm garlic bread, perhaps some lentil soup and white wine.

It all depends on your taste of veg. We usually make a salad: lettuce, tomato, cucumber, green olives(or black), drizzle some Zesty Italian dressing, and a little grated parmesan cheese......Take some hamburgar buns open them up spread some butter, sprinkle a little garlic salt (or powder), add some shreaded mozzarella cheese, place in toaster oven for @ 15-20 mins (or until cheese is melted a light brown)...............Hope that helped.......Enjoy!!!

a simple caesar salad and some warm crusty bread. I like mine dunked in a small dish of good olive oil and balsamic vinegar.
