There are two real Italian ways to do garlic bread, and neither one of them involves butter. Butter in garlic bread is kind of gross. I just wanted to put that because I know it's what people usually use, but ugh, it's not good to me.

The complicated way: cut up a tomato or two into small cubes. Add chopped parsley, at least 3 cloves of chopped garlic and torn basil to taste. All these ingredients are fresh (of course) and uncooked. Pour on some olive oil and balsamic vinegar. Let sit for at least an hour, than put on top of sliced day-old Italian bread.

the simple way: roast your garlic. Throw a whole head in a baking dish with a little olive oil and roast it in the oven for 20 minutes, or if you are roasting a chicken or some other meat throw the cloves of garlic around the edge of the pan with the skins on. Keep it in the skin whatever you do, because it needs to get soft. When it's done it will be soft and sweet. Take the sliced day-old Italian bread and squeeze the garlic out of the skin and onto the bread, spreading it like butter. Yum!

These are both delicious. The one with tomatoes is especially good now that tomatoes are in season. Take it from an Italian!

1 Loaf of Nice Italian Bread.
(If you can't find a nice loaf of Italian bread then French bread will do as well, but just don't tell anyone it's French bread, maybe they won't notice ;)
Fresh Parsley (This is Important!! It MUST be Fresh Parsley!)
Garlic of coarse!
Butter - Real Butter (none of that margarine stuff!) - One whole stick!
Sweet Basil, Garlic Powder, and Oregano
(You will also need patience and concentration to make perfect Garlic Bread. The really crucial part is when you have the bread under the broiler, you really have to pay attention at this point, it can go to not quite crunchy enough, to burnt uneatable Garlic Bread in no time at all...)

BEAUTIFUL GARLIC BREAD

Why pay a fortune for pre-baked garlic bread when all you need is a french loaf and a simple recipe ?

--------------------------------------------------------------------------------

Ingredients
1 French Loaf
4 tsp Butter or Margarine
4 tsp Minced Garlic
1 tbsp Mixed Herbs
1 tbsp Oregano

1 tsp ( tea spoon ) = 5ml
1 tbsp ( table spoon ) = 15ml

Serving Quantity
Serves 4 to 5,
8 to 10 pieces

Preparation Time

2 Minutes

Cooking Time

10 Minutes

All measurements are approximate and may be adjusted to taste.
All servings and portion sizes are based upon a person with an average sized appetite; you can probably halve the servings if you're feeding fat hippies.
All cooking times are approximate and may need to be adjusted to suit your particular appliance.

--------------------------------------------------------------------------------

Preparation

Preheat your grill to a medium temperature.

Slice the French Stick along its length into a number of 10cm logs. Slice through each to create two half-cylindrical bread bases. Cut a number of 1cm deep slits lengthwise along the cut surfaces of the bases.

For every bases - Take a ½ tsp knob of butter or margarine and place in a dish or soup bowl and add ½ tsp of minced garlic. Mix the two together using a fork to create a creamy mixture; Garlic Butter.

Spread the Garlic Butter over the bread bases ensuring that the cut surface is well covered, and that the Garlic Butter is pushed well in to the slits.

Useful Tips

Freshly crushed garlic may be used instead of minced garlic.

--------------------------------------------------------------------------------

Cooking

Place the Garlic Bread on a grill pan with the buttered side down and place under a medium-hot grill until lightly toasted.

Turn the Garlic Bread over, sprinkly on a little Mixed Herb and/or some Oregano, and replace under the grill until the buttered side is lightly toasted. It may be necessary to spread the Garlic Butter mix over the bread during cooking.

Remove from grill and serve while hot.

depends how you want it to be - garlic on bread, or garlic in bread.
For the first one, get a few cloves of garlic, place on a tray, drizzle with olive oil, add sum rock salt and cracked black pepper, and roast in the oven until soft. You can then literally spread it straight onto your bread, toast etc. Is lovely, very sweet, but very powerfull.
For the other method.....
Get about 4 or 5 decent cloves (not bulbs) of garlic. Top and tail them with a sharp knife, then place the knife flat over each clove, and smash it down so that it spreads out. remove the dry skin, and then finely dice. After you have diced it, use the flat of the knofe again to pull over the garlic to crush it some more, dice again, and repeat until it is nice and smooth, or to your preferred consistency. Take a block of butter and gently soften, but dont let it melt completely, over a low heat. Add the garlic and stir it in. If you want, add some fresh chopped herbs. Thyme or oregano work best. Allow the butter to cool for a while. When you want to use it, simply spread over your chosen bred, and either toast under a grill, or bake in the oven.
If you like your cheeses, then try it with a parmesan melt or gruyere.
Hope you like.

You take french bread and slice it up. Spread a combination of butter and garlic powder onto the bread. Put the bread on a cookie sheet into a 400 degree oven for 8-10 minutes.

The better the bread, the better the garlic bread. This is one of those dishes you really need to portion control in advance of making it because it's just that tempting to overeat. I usually use a half of a baguette sliced lengthwise for 4 people.

1 loaf French or Italian bread, cut lengthwise
2 ounces low-fat cream cheese
1 clove garlic, minced
3 tablespoons finely grated Parmesan

Preheat oven broiler to high. In a small bowl, whip together cream cheese and garlic. Spread evenly over cut surface of bread. Sprinkle Parmesan cheese evenly over bread. Put on a cookie sheet, place under broiler and cook until golden and bubbly, about 1 to 2 minutes. Serve immediately
NOT ONLY IS THIS RECIPET GOOD BUT ITS SUPER EASY

Here's an authentic recipe. You will need:

Garlic Puree, made from two roasted heads of garlic***

¼ lb soft, unsalted butter
2 tbsp dry yeast
½ cup warm water
2 ½ cups warm water
2 tbsp kosher salt
3/14 ungbleached whole wheat flour
3 1/4 cup unbleached whole purpose flour
Optional but recommended:

cornmeal

Prepare garlic puree and cream it with the butter. Bring to room temperature if refrigerated.

Mix yeast with ½ cup warm water. Add additional 2/1/2 cups warm water. Add kosher salt.

Stir in the flour, a bit at a time. Start with the wheat flour, then add unbleached flour. When mixed, turn onto a floured surface and knead for 10 or 15 minutes. Dough should be smooth and elastic, and indentations will remain if you poke the dough with your finger. Add flour while kneading if required.

Cover and let rest for a few minutes. Knead the dough a few more times, then turn into a fresh, buttered bowl. Turn it to coat with the butter.

Cover, and allow to rise until doubled in bulk. When doubled, punch down with floured hands.

Sprinkle a baking sheet generously with cornmeal. Use two baking sheets if they are small.

Now you are ready to shape the dough for recipe garlic bread. Divide it into three equal parts. Cover the two pieces that you are not working with. Taking a rolling pin, roll each dough ball into a rectangle that is about 14” by 7”. Spread the rectangle with the garlic butter. Roll the long edge towards the opposite edge, as if making a jelly roll. Pinch ends closed.

Place on baking sheets, then slash the loaves lightly at two-inch intervals.

Preheat oven to 400 degrees F., and place pan of boiling water on the oven floor. Bake recipe garlic bread for 35 or 40 minutes. During this time, spray the bread with water periodically.

The bread will sound hollow when it is done. Cool on wire racks, or eat recipe garlic bread while still warm.

Delicious!

Here's for a SIMPLE, ready-to-use garlic spread you can make:

Mince a few garlic cloves, chop up some parsley.
Lightly saute it in the pan with some butter till fragrant but not too brown/burnt. Add a few pinches of salt. Let it cool a bit.
Now incorporate this into a bar of softened butter and mix it up evenly.

You can store this in the fridge for up to a month or so and use it anytime you fancy. Spread it on a slice of bread (of your choice) and even better - toast it.
