Easy Chocolate Mousse
1 cup semisweet chocolate chips
1 large fresh egg
1 teaspoon vanilla extract
1 cup heavy cream, heated
Sweetened whipped cream for garnish
Place chocolate chips, egg and vanilla into the container of electric blender and blend for 30 seconds.
Remove center of blender lid and while machine is running, slowly pour heated cream into the chocolate mixture. Blend until well mixed and chocolate chips are melted.
Pour into parfait or wine glasses. Refrigerate until set.
Serve garnished with a dollop of sweetened whipped cream.
Makes 4 servings.

Place in a blender:
2 cups chocolate pieces
1/2 cup sugar
3 eggs
3 tablespoons brandy
1 cup boiling milk
Blend until smooth, about 30 seconds. Pour into 8 dessert dishes and chill until ready to serve, at least 1 hour. And if you like, top with whipped cream, fruit, coconuts, nuts, etc.

INGREDIENTS:
1 teaspoon unflavored gelatin
1 tablespoon cold water
2 tablespoons boiling water
1/2 cup sugar
1/4 cup cocoa
1 cup whipping cream
1 teaspoon vanilla extract
chocolate curls
PREPARATION:
In a small bowl sprinkle unflavored gelatin over the cold water; let stand 1 minute. Add the boiling water, stirring, until gelatin is dissolved. In a separate bowl combine the sugar, cocoa, whipping cream, and vanilla; stir to blend.
Beat on medium speed of electric mixer, scraping the bottom of the bowl a few times, until the mixture is stiff. Add the gelatin mixture and beat until well blended. Spoon the chocolate mousse into dessert dishes or glasses. Sprinkle mousse with chocolate curls, if desired. Chill for at least 1 hour before serving.
Makes 4 servings.

INGREDIENTS:
1 Chocolate cake mix (your Choice)
1 (3.9 ounce) package instant chocolate pudding mix
1 cup milk
1/2 cup strong coffee
1 (16 ounce) container frozen whipped topping, thawed

DIRECTIONS:
Prepare cake mix by the box directions.( If you want you could add 1 cup of semi-sweet chip or chunks in the mix for extra chocolate flavor. ) Then pour the batter into two 8-in round cake pans, bake according to recommend box directions.
Just remember if you choose to add choc chips add an additional 5 Minutes.
While the cake is baking in the oven.
Prepare the pudding in a large bowl using 1 cup milk and 1/2 cup of strong coffee instead of the suggested 2 cups on the package.
Fold in the whipped topping until blended. Put the mousse topping in the refrigerator until you are ready to frost your cake.
Serves 8-12

Easy Chocolate Mousse Cake
1 lb butter
1 cup sugar
1 cup strong coffee
8 large eggs
16 ounces semisweet chocolate
Preheat oven to 350°F.
Use a 9 inch springform pan.
With pan locked, coat inside of pan with a thin film of butter. This will help alumnium foil to adhere to contour of pan. Place sheet of alumnium foil inside pan and press along bottom and sides.
This step will prevent batter from leaking during baking.
In heavy saucepan, over low heat, combine butter, sugar, and coffee; stir until all is melted.
Remove from heat.
In separate bowl, beat eggs (by hand or electric mixer) a couple of minutes, until slightly thickened.
Stir in chocolate and mix to a uniform color.
Pour in pan and bake for 50 to 60 minutes.
Cake will fall slightly as it cools.
When room temperature, open springform pan, peel foil away from sides, place serving plate on top and flip over. Remove remaining foil.
Serve at room temperature.
Note: This cake is rather hard to slice, use plain dental floss or kitchen string, and holding taut in both hands, slice through cake, dividing it as you go.

MARVELOUS CHOCOLATE MOUSSE
300 g (1 1/2 cups) dark chocolate, chopped
2 tablespoons milk
6 egg yolks
100 g (scant 1/4 cup) confectioner's sugar
500 ml (2 cups) thickened cream
Fresh berries (optional) to serve
Place chocolate and milk in a heat proof bowl, set over a saucepan of boiling water and stir constantly until melted and smooth (mixture will be quite thick).
Remove and cool slightly. Place yolks and sugar in a large bowl and beat with an electric mixer for 5 minutes, until thick and creamy.
Beat cream with an electric mixer in a bowl then gently fold through chocolate mixture with a spatula until just combined.
Spoon into 12 x 1/2 cup capacity dishes and chill for 4 hours, until set. Serve with fresh berries if desired.
EASY CHOCOLATE MOUSSE PIE
1 pkg. (8 oz.) cream cheese, softened
1/2 c. Hershey's cocoa
Graham cracker crust
1 c. confectioners sugar
1 1/2 tsp. vanilla
2 c. heavy or whipped cream
Prepare graham cracker crust, set aside. Beat cream cheese and cocoa in large bowl until fluffy and well blended. Gradually add confectioners sugar; blend well. Stir in vanilla, whip cream until stiff; fold into cheese mixture. Pour into cooled crust; chill until firm.
GRAHAM CRACKER CRUST:
1 1/2 c. graham cracker crumbs
3 tbsp. sugar
1/2 c. butter, melted
Combine graham cracker crumbs, melted butter and sugar in small bowl. Press mixture firmly onto bottom and up sides of 9 inch pie pan. Bake at 350 degrees for 10 minutes. Cool.
