You are definitely delving into cosmetic history here. Manic, so far has given you the best advice. Let the beer go flat -- get rid of the carbonation activity by leaving the cap off for a few hours. I would differ with Manic, however, in how you use it. I wouldn't wash my hair with it, I would only use it to rinse. Beer is high in protein and will neutralize most soaps or shampoos. Actually, it could be considered more of a conditioner. Brand is not material but I would stick to the lighter beers as the dark heavy ones will give your hair and odor something like railroad ties or cheap shoe polish.
Good for you that you are interested in some old "home remedy" that worked very well and didn't require FDA approval. If you think about it tho, at about $1 per beer, it aint a cheap treatment.

Any import beer is good. The amber ales. There is something in them that makes your hair soft. Just poor it on your head in the shower and rub it in....then rinse and condition. They use to actually make shampoo with beer as an ingredient

No specific brand - any on sale. Leave it open for quite a while to get rid of the bubbles/foam. Really rub into your hair, let set for a while and then rinse out. Don't use shampoo right afterwards. Wait a day or two.

Any beer will do. You have to open it and let it sit for a day to go flat. Then you can wash your hair with it.
